As the society progresses, our dinner table seems to undergo changes, too. However, does it ever occur to you that your health has been compromised by what you eat? For decades diners and chefs have been trying hard to work out a taste-health balance. If you’re eager to learn which food is both flavorful and healthy, be sure to watch “You are the Chef”.

Strolling down the famous West Nanjing Road and walking past the magnificent buildings and revamped landmarks, you’ll reach a place where the traditions of the past and the ultra-modern intersect. Here, in the heart of Shanghai, stands The Portman Ritz-Carlton Shanghai – a timeless emblem of luxury which makes you feel at home in a constantly changing metropolis.

 

Ingredients:

8 u 15 prawns; 2 tbs shoyu; 2 full heads of broccoli; 2 large heads of garlic bulb; 2 medium lemons; 1/2 cup extra virgin olive oil; sea salt, organic pepper.

 

Preparation:

1. Cook the broccoli, make some lemon garnish and shower the broccoli with squeezed lemon juice;

2. Slice the garlic and cook;

3. Sauté the prawns, deglazing with shoyu;

4. Serve.

 

Mr. Rassinoux, the hotel’s executive chef, deliberately uses extra virgin olive oil and lemon to pair the broccoli for their respective rich content of Vitamin E and C. His health-conscious choice is also confirmed by Mr. Rainer J. Burkle, Area Vice President and General Manager who has been invited to taste the dish, in addition to being applauded by Heidi and others present. The preparation looks a bit complicated, but the result is surely worth the effort. You’ll get a double reward of deliciousness and health.

烤对虾配柠檬,大蒜和椰菜原料

8~15规格的对虾, 2汤匙酱油,2个椰菜,2整只大蒜,2中等柠檬,1/2杯轻榨优质橄榄油,海盐,有机甜椒。

 

烤对虾配柠檬,大蒜和椰菜制作方式

先将椰菜放入锅中,烧熟以后乘盘,配些柠檬作为装饰,将柠檬汁滴撒在椰菜上;再将大蒜切成片放入锅中,同时将对虾放入锅中,浇一些酱油在虾身上,放入调味料进行翻炒,炒熟以后就可以乘盘了。

在对虾中,巧妙融合橄榄油的维E和柠檬中的维C,尽显厨师的独具匠心。此次洋厨房的拍摄,更邀请到丽思卡尔顿酒店管理集团中国区域副总裁兼上海波特曼丽嘉酒店总经理博瑞恩先生对菜进行品评,对于菜品的健康价值给予了肯定。主持人Heidi及众人的赞赏声亦是络绎不绝。虽说制作过程看似稍显复杂,但当您品尝此菜品时,满足感顿会油然而生。因为从中您收获到的不仅是美味,更有健康。

 

除此之外,本月洋厨房还拍摄了上海建国宾馆中餐行政总厨李书科先生、上海世纪皇冠假日酒店行政总厨张文虎先生以及上海龙之梦万丽酒店行政总厨安哲明先生。
