Music is art, so is cooking. In this episode of You Are The Chef, Heidi and Mr. Joey Huang, a chef currently working with the Four Points by Sheraton Pudong Shanghai, will work together to present the flavorful Rendang Curry Chicken. It’s the first time for the Grand Hotels staff to accompany Heidi to the kitchen for selecting ingredients, and the experience is unusual and great.
 
Venue: Carrefour, Jinqiao
Ingredients are important to making a nice dish, just as the early phase creation to art. In selecting appropriate ingredients, Joey, a warm and slightly shy young man, insisted that we should put quality above everything else. When we see him in the supermarket on a summer morning, carefully examining and comparing various options, exchanging ideas now and then with Heidi, in the hope of getting the best, we can feel his serious attitude in work and a passion towards his profession. Isn’t it a good beginning?
 
Venue: Four Points by Sheraton, Pudong Shanghai
Strategically located on the South Pudong Road, Four Points by Sheraton Pudong Shanghai enjoys easy access to other parts of the city. Walking through the elegantly decorated Lobby, we reached the elevator which took us to the Chinese Restaurant on 29th floor, and the first thing in sight is a vivid penjing (a Chinese miniature scenery) with waters running in tranquility. At the sight of the harmony of running water, little bridge and houses, we were completely oblivious of the scorching heat outside. The décor is of China’s Ming and Qing dynasties, infused with a touch of the Chinese minorities to impress the guests. It is as if we had embarked on a cultural tour the moment we stepped into the restaurant.
 
Cooking started, but Heidi was in trouble. When she put the diced chicken into the sizzling oil, she nearly had herself burnt by the spattering oil. On seeing this, Joey kindly suggested we wipe the chicken until it is dry before putting into the oil. Another tip is when we grind materials like garlic, shallot, balancha paste, fresh turmeric, fresh galanga, coriander seed, red chilli, cumin, fennel and lemon grass, add a little water to the mill beforehand.
 
Ingredients:
Chop chicken 500g、 garlic 75g、 shallot 75g、 balachan Paste 2.5g、 fresh turmeric 5g、 fresh galanga 7.5g、 coriander seed powder 2g、 red chili 1.25g、ground cumin powder 1g、ground fennel 1g、lemon grass 2.5g、 chicken powder 2.5g、 sugar 10.5g、 salt 5g、 coconut milk 20g、yellow bean oil 50g.
 
 
Cooking Procedures:
Chop chicken into pieces rinse and wipe dry. Heat 50g of oil in a wok . Sauté ingredients A and B until fragrant, add in chicken and seasoning and stir fried until well done. Sauce cook briefly until it thickens and serve hot.
 
Thanks to Joey’s assistance, Heidi finally brought out a superb dish. Golden chicken and green shallot create a perfect match, making your mouth watery at the first glance, not to mention the lingering spicy curry aroma. Don’t you want a bite? Take action now and make your own Rendang Curry Chicken.
 
     音乐的演奏是一项艺术,同样的,享受美食也是一项艺术。本期《大酒店》随着Heidi首次来到厨房尽心选材,体验了一次不同于以往的艺术之旅:来自浦东福朋喜来登由由酒店的厨师——黄华伟先生偕同摩登女主持Heidi为大家献上呤噹咖喱鸡。

      对于享受美食而言,挑选材料是十分重要的,因为对于艺术而言,最终展现取决于初期的创作,美食当然也是如此。黄华伟厨师为人热情,却又略带腼腆,然而在选材上,他却有着自己的理念,那就是保证材料的绝对上乘。在超市里,他精挑细选,认真比较食材。与此同时还不忘和Heidi交流,彼此交换意见。在盛夏的早晨,我们体会到了厨师对料理的热情与执著,不觉得是个不错的开始吗?

     上海浦东福朋喜来登由由大酒店位于浦东南路这一繁华路段,交通便捷。来到酒店后,我们穿过典雅的大堂,搭坐电梯来到29层的中餐厅。首先映入眼帘的是一个相当别致的盆景,涓涓细水,似小桥流水人家,仿佛一下子摆脱了酷暑的桎梏。餐厅的装潢仿明清风格,清新典雅,同时又融入了少数民族的异域风情,这一切使得客人在进入餐厅的一刹那,好像经历了一场文化之旅。在料理过程中,Heidi碰到些小麻烦,在放入鸡块时,差点被溅起的热油烫到。所以黄华伟厨师友情小提示:在把材料放入热油锅时,把多余的水分沥干,而在研磨大蒜、冬葱、咸虾糕、姜黄、南姜、香菜籽粉、红辣椒、枯茗、茴香、柠檬香草时,可以在研磨机里加些水。
 
呤噹咖喱鸡原料:
 
鸡肉500 g、大蒜75 g、冬葱75 g、咸虾糕2.5 g、姜黄5 g、南姜7.5 g、香菜籽粉2 g、红辣椒1.25 g、枯茗1 g、茴香1 g、柠檬香草2.5 g、鸡精2.5 g、糖10.5 g、盐5 g、椰奶20 g、豆油50g。
 
呤噹咖喱鸡的制作方法:
 
     先把鸡肉切成小块,然后冲洗,并沥干待用。然后在炒锅里加入50克油加热,将上体原料中提到的大蒜、冬葱、咸虾糕、姜黄、南姜、香菜籽粉、红辣椒、枯茗、茴香、柠檬香草等放入干煸直至闻到香味,最后加入鸡肉和调料翻炒到熟透为止。调味汁要小煮一下直到汁水变稠并趁热浇在鸡肉上。
 
     在黄华伟厨师的协助下,Heidi完成了呤噹咖喱鸡的料理。浓郁的、微辣的香味缓缓飘来,刺激着人们的味蕾,而金黄色的鸡肉配上葱绿的冬葱绝妙搭配,又给了我们视觉上的享受,马上令人馋涎欲滴,想即刻尝试味道来满足口腹之欲。心动不如行动,不妨也马上动手制作吧!
