罗师傅曾经在香港、新加坡、马来西亚等地做过类似的烧菜节目,但走进超市购买原料也尚数首次。按照菜单,Heidi与罗师傅一同挑选了马蹄、蜜糖豆、明虾、彩椒、油条、黄酒等制作原料,为烧菜作好充分的前期准备。
时间:13:00

地点:上海世茂皇家艾美酒店66楼
s 明虾去壳。(这里罗师傅教了大家一个去壳的好方法:先去头,再拨壳。)
s 去壳后,清水洗净,用纸吸干水份。
s 取少量淀粉1/2勺,盐
1/4勺,加入虾中,搅拌,待用。约10分钟。
s 蜜糖豆去两头。
s 马蹄从水中捞出,切片。
s 彩椒切丁。
s 蒜、姜切末。
s 锅烧热,加少量油,倒入姜、蒜末爆香;
s 放入蜜糖豆,煸炒;加1大勺水(保持蜜糖豆口感脆爽)
s 再放入彩椒,马蹄,1/4勺盐,煸炒;
s 盛出,待用。
s
热锅,倒入少量油,姜爆香;
s 火关小,放入虾,约2分钟,待变红;
s
加1/4勺盐,将上述待用的蜜糖豆、马蹄等倒入,翻炒;
s 加水淀粉1勺(锁住菜的水粉,防止营养流失);
s 最后加入油条,翻炒;
s 盛出。

『Grand Hotels』 April Issue
(2007) marks the commencement of a cooperation of Dragon TV and the
magazine on featuring You Are The Chef, a popular English-speaking
cooking program which has swept Shanghai and even China recently.
Having been with Host Heidi, Chef Law Yip Lam (Executive Chef, Le
Royal Méridien Shanghai) and the crew for a whole day, our editor
is going to present an all-round report of how the chic TV Host and
the star Chef have worked together to prepare the healthy and
enticing Stir Fried Prawn, Water Chestnut and Flour Dough. The
cooking is not difficult at all.

Venue: A Hypermarket Near
Zhongshan Park
You Are The Chef invariably
begins with Host Heidi and the featured Chef buying cooking
materials in a hypermarket, a highlight which helps to attract
viewers’ attention by showing them how to pick out the freshest
ingredients.
Despite his experiences in
attending similar cooking programs in HK, Singapore and Malaysia,
Chef Law made his first hypermarket purchase before shooting with
You Are The Chef, and bought, together with Heidi, water chestnut,
sweet bean, king prawn, mixed bell pepper, flour dough and cooking
wine for a thorough preparation.

Méridien Shanghai
Centrally located in the heart
of the busy Huangpu District and on Nanjing Road, Le Royal
Méridien Shanghai played host to the shooting, which took place in
789 Nanjing Road on the hotel’s 66th floor. It is a space
furnished with soft carpet and cozy sofas, and a panoramic view of
both sides of the Huangpu River is spread before the
eye.
Standing behind a counter with
water chestnut (soak in the water to prevent oxidization), sweet
bean, king prawn, mixed bell pepper, flour dough, garlic, ginger,
Chinese wine, salt, starch, starch in water, pepper, sugar, oil,
water and chicken powder placed orderly atop, Heidi and Chef Law
were poised for shooting.
Preparations:
¨ Peel prawn shell. (Chef Law
recommends: pluck off the head first, then peel the
shell.)
¨Wash shelled prawns. Use
kitchen paper for drying.
¨Mix shelled prawns with 1/2
teaspoon starch and 1/4 teaspoon salt, and season for 10
minutes.
¨Cut both sides of the sweet
bean.
¨Slice water
chestnut.
¨Dice mixed bell
pepper.
¨Chop garlic and
ginger.
Cooking
Procedures:
¨Heat the pan, add some oil,
and stir fry chopped ginger and garlic.
¨Stir fry sweet bean. Add 1
tablespoon water to keep sweet bean fresh and crunchy.
¨Add mixed bell pepper, water
chestnut and 1/4 teaspoon salt, stir fry it.
¨Put it aside.
¨Heat the pan, add some oil,
and stir fry chopped ginger.
¨Turn the heat low, add
prawns, and stir fry for about 2 minutes until they turn
red.
¨ Add 1/4
teaspoon salt and previously cooked sweet bean and water chestnut,
stir fry.
¨Add 1 teaspoon starch with
water (keep the nutrition).
¨Add flour dough and stir
fry.
¨Serve.
Guided by Chef Law, Heidi did
an excellent job and enjoyed cooking enormously. Their
collaboration was so good and so natural that you can hardly
imagine it was a first-time experience. As to the good points of
the dish, water chestnut helps alleviate internal heat, prawns are
nutrient and easy to cook, and the dish pleases both the eye and
nose, to name but a few. No wonder Heidi declared that she’d make
it at home and share the delicacy with her family.
