我的问题没少,反而多了:1)到底买不买不粘锅呢? 现在,对这个都开始拿不定主意了,唉。本来我有个毛病,就是见不得粘锅,一粘锅就心烦,可是,仔细看那些关于不粘涂层的说法,也实在让人觉得心里比较别 扭。目前来看,我看到的介绍说明里,貌似最可靠的不粘锅,还应该是Vitamix家的吧,他家的锅子在处理不粘涂层时候的温度似乎是最高的。
2)猪头被我罗嗦得心烦了,就说,那就买不锈钢锅,好牌子的应该也不怎么粘,可是,买什么牌子又拿不定主意了。猪头说就买All Clad得了,说是特意帮我问的同事,是个好牌子,用起来感觉很好,我查了查,评价上说这是Classic的品牌,很不错。又想起咖啡上好像有不少姐妹都 推荐双立人牌的,今天还有收到他家的广告,看着也不错。
不过我还是对Vitamix家的Waterless不锈钢锅比较动心(应该会有粘锅的吧?要不何必再出一个不粘系列的)---低温制作,食物不缩,据说不 加水不加油,做出的蔬菜尤其美味,还可用来在灶台上烘烤东西,比如面包啥的呢,有人说是因为妈妈就用这锅子所以自己也用(算是家传了都),可也有人说很不 喜欢。猪头说,为啥人家大厨们都推荐All Clad,没人说Vitamix是经典?就买人家都推荐的得了。我就拿不定主意了。
其实,我老是念念不忘Vitamix家的锅,主要原因,就是我用他家的搅拌器用得实在是舒心痛快,爱不释手,是我买的最满意的一样兵器了,把东西丢进去,咔咔咔,一眨眼的功夫就全部搞定。
一查查到半夜10点多,猪头说,快睡吧,你那脑子还够用不?明天再接着琢磨吧,不着急,这几天没锅就先不做饭呗。这猪说的也是,还是先去睡了,这事儿整的,没想到还挺闹心。
对了,青宝贝呀,你说的那个比普通牌子贵20倍的好不粘锅是啥牌子的呢?我想看看我这儿能不能买到,嘿嘿。

The Teflon debate rages on
Vendors say the coating in all nonstick cookware is FDA-approved and won't harm you if it flakes into your food. In fact, it's supposed to "go right through you," which is not an idea we particularly relish. But recently, the safety of Teflon has again come under question.
Teflon has long been the leader in the nonstick coatings, but as noted in an August 2004 article published by The New York Times, its safety has come into question. Last spring, the Environmental Protection Agency (EPA) issued a preliminary report that suggested PFOA (a chemical used as a processing aid in making Teflon products) may be a carcinogen. The EPA has not advised consumers to stop using Teflon products because PFOA doesn't end up in the products. According to an article in the May issue of MacLean's magazine, DuPont stated that their products do not contain PFOA. Fluoropolymer, a substance made up of PFOA, is sprayed on cookware to give the nonstick Teflon coating. High temperatures seal the fluoropolymer, which supposedly destroys the PFOA, says DuPont.
It turns out that high temperatures (over 500-degrees Fahrenheit) can cause Teflon (and other similar nonstick coatings) to create fumes, which are especially dangerous to birds and their small lungs. Other kitchen fumes, created by burning butter or self-cleaning oven cycles, are also dangerous to birds. The question now is whether they can also be harmful to humans. One acknowledged issue is polymer-fume flu. When a nonstick pan is overheated for approximately 15 minutes in a non-ventilated room, fumes can cause a common-cold-type reaction in humans. Cook's Illustrated tested nonstick skillets with this in mind, finding that it's very difficult to overheat a nonstick skillet while cooking food. That's because the water released by food helps cool the pan. Testers were able to maintain a high, consistent temperature with an empty pan. DuPont concedes that an empty, overheated Teflon-coated pan is dangerous. A pan in this state releases toxic fumes. The jury is still out on the temperature needed to make this happen (the non-profit Environmental Working Group says 325 degrees or a medium flame, DuPont says 660 degrees).
Most experts say you can safely use Teflon at home on low or medium temperatures, and that simply opening a window is enough to ensure you won't be exposed to Teflon fumes at higher temperatures. Manufacturers are treading lightly around the Teflon issue. We contacted All-Clad, who makes Emerilware Nonstick cookware, and a representative told us that the nonstick coating is made by DuPont, but is not Teflon. A Calphalon representative told us the nonstick coating used in Simply Calphalon cookware is not Teflon either, but is made by Exxon-Mobil and is manufactured using Polytetrafluoroethylene. This is still one of the chemicals at the center of the Teflon debate.
A number of lawsuits against DuPont are pending. One of the latest suits comes out of Miami, Florida where, according to the August issue of Chemical Week, attorneys hope to win compensation for "almost every American that has purchased a pot or pan coated with DuPont's nonstick coating." Other demands include a medical monitoring fund and a warning label on cookware.
It's too early to tell if manufacturers will stop using Teflon as their nonstick answer. If it has you worried, go for non-coated cookware instead. Since Teflon and other nonstick coatings at low and medium temperatures do not seem to be at issue, using a nonstick pan for eggs, pancakes and other low to medium temperature tasks should not pose a danger.
