番薯叶/地瓜叶/红薯叶在我的家乡是几乎每家每户都会在后院种一大片的绿叶蔬菜。我们平时吃的都是邻居后院长得控制不住了一大把一大把剪了送来的,几乎从来不必买。红薯叶是个高营养高纤维低热量、又抗癌的好东西。
今年我在前后院都种了番薯叶,第一茬摘来用马来西亚的多用途叁巴辣椒酱炒了吃,味道类似马来风光,非常好吃。
Many people grow sweet potato at their backyard back in
my hometown. Not for the potatoes but the leaves. The plant grows
fast and spread like crazy in tropical climates.
I plant sweet potato too for its leaves at my
backyard every
summer.
The common way to prepare
this delicious and healthy vegetable in my home country is to stir
fry it with
材料:
1把 番薯叶/地瓜叶/红薯叶 (摘叶,杆儿去丝)。

1 小勺 蒜蓉

Ingredients:
1 bunch (around 300-350 gm)
of sweet potato leaves

1 tbsp dried shrimp(soaked in hot water for about 10 minutes)
1 tsp minced garlic
1/2 fresh red chili
Salt to taste
1/4 tsp of brown sugar (Optional)
1。把红薯叶采收后摘叶,杆儿摘好去丝,洗净沥干备用。
2。先把蒜剁碎,虾干切碎,辣椒切丝。
4。热上一口锅,加入大约3大匙的油(油多一些会更好吃),把蒜蓉辣椒和虾米炒香。加入多用途叁巴辣椒酱,炒匀,加入大约
1/4 茶匙的糖翻翻后加入番薯叶,翻炒均匀,下盐调味。起锅。
