1. 你是如何理解融合料理的？

对于厨师来说，融合料理是一个很值得去探索的领域。厨师们喜欢周游世界，去探索新的食材，新的文化和新的烹饪技术以创造出意想不到的料理。融合料理可以将传统料理转化成一种新的，独特的料理。

2. 你觉得有没有一些特定的料理搭配在一起会胜过其他的？

我个人认为料理的搭配是没有绝对的。我相信每人都有自己的偏好。一名优秀厨师的职责是选用上等的食材并用自己的方式使原材料达到一种平衡，为食客创造出一种全新体验。

3. 你最喜欢那种融合食物？ （比如：法餐/中餐，西班牙餐/中餐等）

就我而言，我觉得地中海风味与日本风味的融合非常不错，他们之间有许多共同点。比如：都选用新鲜食材，并用极简的方法烹饪，却很美味。

4. 在上海，你有没有最喜欢的融合料理餐厅？

在上海，我并没有一家最喜爱的餐厅。我喜欢探索新的餐厅以获得不同的体验和观点。上海有太多餐厅，很难去选出一间最好的，而且每周都会有新的餐厅开业。但是，很多地中海/亚洲风味融合的餐厅食物都不错。

1. What do you think of fusion cuisine?

I think fusion cuisine is a good concept for chefs to explore. Chefs like traveling around the world, discovering new products, new culture and new methods of cooking to create something unexpected. Fusion cuisine can transform a traditional dish into something new and sensational.What do you think of fusion cuisine?

2. Do you think some cuisines pair better than others?

I don't personally think that one cuisine pairs better than another. I believe that everybody has their own preferences. The job of a good cook is to work with a great product to find a way to create a balance among ingredients, offering people a new food experience.

3. What is your favorite type of fusion food? (IS French/Chinese, Spanish/Chinese, etc.)

For me, I have found a good match with Mediterranean and Japanese cuisines. These two cuisines have many commonalities, such as featuring fresh ingredients and simple, but delicious flavors.

4. Do you have a favorite fusion restaurant in Shanghai?

I don’t have a favorite one here in Shanghais. I like to try out new places to gain different experiences and perspectives. Shanghai has many restaurants and it is difficult to say which one is the best. New places open every week! However, I have had some great food at Mediterranean-Asian fusion restaurants.
