我们刚刚成功举办了第二届中国葡萄酒挑战赛,在这一周里,来自世界各地的葡萄酒专家齐聚上海希尔顿酒店,畅谈美酒与人生。我觉得,是时候跟大家分享一下这次盛会的感想了。
很多时候,繁复的评酒规则会把享受美酒这件趣事复杂化,专家们总是告诉你,这个你可以做,那个你不可以做。比如白酒配白肉,红酒配红肉,还有其他诸如此类的规则让你去遵守。
然而,我却认为酒的选择应该由喝酒时的心情而不是食物来决定。下次当你坐在餐桌前,一遍遍的研究酒单,却还是不知道应该开那瓶酒的时候,跟着你的直觉走吧,第一时间浮现在你脑海的酒就是此刻最适合你的酒。就这么简单,让心情帮你做选择。
所以,如果此刻你想要喝一瓶Cabernet Sauvignon, 又想要吃点鱼,就这么做吧,不要去想其他的,开心就好。至今为止,我最愉快的饮酒经历是在迪拜的时候,一个好友在下午邀请我去他家里做客,我们开了一瓶1982年的Latour, 然后吃着他用自家烤箱做的比萨饼,一起观赏日落。我永远都记得那瓶酒的味道,他让我尝到了幸福,那种当你与朋友,家人和你爱的人在一起,分享的快乐。
所以,下次你拿着一份酒单,犹豫不决要喝什么的时候,点一瓶Chardonnay来配你的牛排吧,或者其他任何能让你开心的酒。那些能让你发出会心一笑的酒才是好酒。

We have just finished the second year of a truly excellent China Wine Challenge. It’s a week when the most impressive wine experts in the world gather at the hotel. As a result, it seems like a great time to share some thoughts on the subject.
Too often wine and the enjoyment of wine is complicated by rules that tell you what you should or should not do. White wine with fish, red wine with red meat and other such norms you are expected to follow.
However, I think choosing a wine should be influence by mood and not by food. Next time you are in a restaurant studying a wine list or sitting at home contemplating which bottle to open, remember one thing: that the bottle of wine that you are thinking about exists for one single purpose. That purpose is quite simply to satisfy your personal drinking pleasure. That is the sole reason why it was created.
So if you feel like a great Cabernet Sauvignon with a piece of fish, go ahead, do what makes you happy. The most enjoyable wine experience I have ever had was with a friend of mine who lives in Dubai who invited me to his house late one afternoon. We opened a bottle of 1982 Latour and watched the sun set while eating fantastic homemade pizza made from his own pizza oven. I will always remember that bottle, it was amazing. Wine is intended to bring pleasure and enjoyment to your life. To share memories and moments with friends, family and loved ones.
So the next time you
have someone hovering over your shoulder while you’re trying to
choose a wine, order a Chardonnay with your steak – or whatever
your heart desires.
