苦槠又名槠栗,为皖南一带常见的乔木,种子如毛栗可食。明李时珍《本草纲目》说:“槠子处处山谷有之,生食苦涩,煮炒乃甘,亦可磨粉。”
苦槠豆腐制法与楂子豆腐制法大同小异,这两种豆腐均呈酱褐色,光滑而微透明,江南人家一般用其配以红辣椒、腌菜等同炒,添加生姜、大蒜和香葱等作料,炒时有讲究,做到锅热油老,慢慢煎炸,切忌乱翻,否则易碎。风味独特,观之如美玉凝脂,食之柔嫩爽滑,鲜爽清香,美味可口。
