我家楼顶养了一批鸡,端午节假期后,带了三只上广州。虽然冻过,但也比市场上大部分的饲料鸡好。也就花了点心思,分割之后一次一种食法,最后一看,基本凑齐了十种。分享一下成品图,广东人食鸡的一些方法,供大家参考。
一、白斩鸡,是食鸡的当然首选。
湛江人乃至广东人,食鸡首选白斩鸡,毋庸置疑的。趁鸡还没进冷冻仓,拿一块三黄阉鸡的下庄(图1-2),做一份白斩鸡,解解馋,非常好吃。蘸碟当然是沙姜蒜头豉油花生油,经典。这次从家里买了点酿造豉油,口感比价适合白切鸡,感觉不错。

后来又用半只麻鸡,做了一次。25一只买来的小麻鸡,养了三四个月味道也不算好,肉薄皮薄,口感韧。

二、手撕鸡,鸡汤鸡油盐捞。
用阉鸡下庄和鸡杂,做一份手撕鸡。因为是好鸡,滋味自足,只放了盐、鸡汤、鸡油(鸡汤面撇出来的)来捞。非常美味之外,吃完也不会口渴。外面市场的手撕鸡很便宜,但是用大量鸡精味粉来提鲜的,我少食。

三、鸡胸肉丝炒瓜菜,送饭佳。
鸡胸肉和其他部分特性不同,比较容易熟烂。做白切鸡或蒸,口感都容易柴,单独剔出来,切丝加盐、生粉、油、胡椒粉腌制了,用来炒银芽和甜瓜丝。因为是足龄的走地鸡,鸡胸肉其实口感味道都很好,也是一道送饭的好菜。

四、冬菇煀鸡,两者是官配。
冬菇和靓鸡的搭配绝佳,煲汤、炒、煀、焖,蒸,味道都好。我最爱冬菇煀鸡,香浓美味,尤其吸收了鸡汁的冬菇,最为美味。做这道菜鸡块要慢慢煎到干香,冬菇要彻底泡透,飞盐水,鸡油炒香,最后略炒焗,攒入米酒,那香气最是迷人。

五、水晶鸡(隔水蒸鸡),不挑鸡材。
隔水蒸鸡,是一个很好的菜式。对鸡本身的材质,并没有那么挑剔。用盐和黄酒、香料激发味道,隔水长时间蒸焗,形成鲜嫩多汁的口感。所以这半边冷冻的麻鸡,我选择了隔水蒸的方式,效果确实还不错。(前面提过麻鸡味道不够鲜,口感韧。)

六、红葱头蒸鸡,已成捻手小菜。
近一年,经常做红葱头蒸鸡。红葱头油炸香之后,和鸡一起蒸熟,有十分迷人的香气味。红葱头蒸鸡有几点,鸡要新鲜,最好现劏现蒸;红葱头要多,炸到香口;蒸的火候要短,五六分钟即刻出锅,稍候就水汪汪,失却状态。

七、云南汽锅鸡汤,极鲜美但汁少。
去年在云南建水买了汽锅回来,第一次使用,就闹了个大乌龙,汽锅放进了蒸锅内部,结果只有一点点汁。后来上网查询,才知道搞错了,但按照正确的方法,蒸了很长时间,汤汁也是很少,可能密封没有做好,下次再试。汤倒确实是很鲜美的。

八、鸡块炒配菜,家常味道。
这就不多说了,好的鸡随便炒炒也好吃。这是甜瓜和菜心啦。

九、鸡汤浸瓜、煮粉面,都是好嘢。
做白切鸡等,会有副产品鸡汤。可以加花菇沙虫等好料,煮成靓汤。也可以滚瓜菜、煮汤粉汤面,都很好。清淡滋味,汤全部喝了,也一点都不口渴。

十、自家靓鸡油,也不要浪费。
自己家里的靓鸡,鸡油也是好东西。味道颜色都很好,一定要好好利用起来。最简单就是用鸡油灼青菜,有化腐朽为神奇之功。这次花了别的心思,用鸡油做了两道家常菜。鸡油红葱头豉油皇腐皮,鸡油煎炒水豆腐,都是很精彩的滋味小菜。
