无与伦比的鲜美 <wbr> <wbr> <wbr> <wbr>清蒸桂鱼

    桂鱼,又名鳌花鱼,学名鳜鱼,属于分类学中的脂科鱼类。桂鱼是“三花五罗”中最名贵的鱼,即使在过去一般百姓也很难消费得起。桂鱼肉质细嫩,刺少而肉多,其肉呈瓣状,味道鲜美,向为鱼中之佳品。唐朝诗人张志和写下的著名诗句“西塞山前白鹭飞,桃花流水鳜鱼肥”,赞美的就是这种鱼。

    清蒸桂鱼,是江浙一带非常普遍的做法,不要小看简单的这一蒸,蒸是中国菜特有的做法,沈宏非说:“清蒸对一条鱼来说无疑是最高的礼遇……”而对于肉质鲜美的鱼来说,清蒸无疑是保存其美味最好的烹调方法。整鱼只需稍加腌制,和姜葱在水蒸气的氤氲中你中有我我中有你,经过了姜葱洗礼后的鱼肉去除了腥味徒留鲜味,然后在如花般的葱丝和红椒丝的装饰下,烹以少许豉油调味,最后,在热油的醍醐灌顶后盛装华丽登场。整个过程简直就是一场洗礼,鱼还是那条鱼,完整如初,却已是肉如凝脂味极鲜。拨开红绿相间的葱丝红椒丝,夹起一块雪白的鱼肉,蘸些许豉油,入口是肉质鲜美唇齿留香,鱼肉自身的鲜美完美保存。看似轻描淡写,却正好恰如其分,增一分则浓,减一分则淡了。

 

 

 

 

 

清蒸桂鱼

原料:八两左右桂鱼一条,盐半勺,料酒20克,姜数片,醋20克,蒸鱼鼓油15克、大葱丝、青椒丝、红椒丝姜丝适量

1.桂鱼去鳞、去腮及内脏,清净干净后置于碗中,背上剖花刀,将鱼的两面和肚子抹少量盐,码上姜片,加入料酒和醋,腌渍5-10分钟;

2.将鱼摆入盘中,放入已上汽的蒸锅

3.盖上锅盖,蒸10分钟左右开盖,撒上葱姜丝和辣椒丝,再蒸2分钟即可。

4.将蒸好的鱼取出,淋上蒸鱼鼓油即可。

PS:

1.清蒸鱼的选材很讲究,一定要新鲜的鲜活桂鱼,最好现杀现做,如果在市场买回来,一定要在30分钟内做熟,否则鱼肉会变僵硬,口感就不鲜美了;

2.蒸鱼讲究大汽旺火,所以一定要上汽后再将鱼放入蒸锅中,而且全程要使用大火力旺蒸;

3.桂鱼本身的肉质非常鲜嫩肥美,所以腌渍的时候盐不可以放多,以小半勺盐为宜,味道过重反而会抹杀了鱼肉本身的鲜美;

4.鱼出锅后淋上蒸鱼鼓油非常重要,这会为鱼带来不一般的鲜美口感。
