    坨屁屁很喜欢吃星巴克的黑巧克力玛芬,每次去都必点一份,吃得跟个小黑猫似的。其实我也很喜欢巧克力口味的东西,尤其是浓郁的黑巧克力,但是一直都不太敢吃,因为本来就是喝水都胖的体质,不控制一下估计就长得跟猪似的了!

    可是巧克力的诱惑,不是那么容易就能抗拒的,每次看到德芙的广告,或者路过蛋糕房,刚出炉的巧克力蛋糕飘出阵阵诱人的可可浓香,那时候就口水哗哗的,基本上被诱惑个三四次,我必定会忍不住破戒,偷偷吃一下巧克力或者可可蛋糕。

    今天的这款小蛋糕,就是打着儿子的旗号忽悠自己的,因为儿子叫着要吃巧克力蛋糕,可是做出来他只吃了两个,剩下的都是我解决了滴!不算成功的尝试 <wbr> <wbr> <wbr> <wbr>超浓郁黑巧克力玛芬

    虽然是山寨星巴克,可是自认山寨得不算很成功。星巴克的玛芬,是那种很柔软的口感,面团的膨发很好,象蘑菇云一样,有溢出的流动感。所以我想应该是分蛋法做的,可能还加了不少的泡打粉之类的发酵剂。于是我放弃了传统玛芬的全蛋法,而是用分蛋法做的,也加了一定量的泡打粉,可是最后效果还是不理想,膨发不是很好,有些干硬,没有那种流动的感觉,俺想问题应该出在面团上,面团的含水量少了,应该再加些牛奶或者淡奶油之类的,可能效果会好些。所以下面给出的方子里我加了牛奶,但在步骤图里是没有的,这点请各位朋友注意一下哈!

 

 

 

 

 

超浓郁黑巧克力玛芬(硅胶模9个的量)

原料:无盐黄油120克、细砂糖100克、香草精1小勺,蛋黄2个、蛋清2个、低筋面粉120克、可可粉50克、泡打粉2小勺、牛奶100ML、黑巧克力40克、好时巧克力酱50克、烘培用巧克力豆30克

1.低粉、可可粉、泡打粉混合过筛;

2.蛋白与蛋黄分离备用;

3.黑巧克力隔水加热融化,加入巧克力酱搅拌均匀;

4.黄油室温软化后用电动打蛋器搅打至顺滑;

5.加入50克细砂糖和一小勺量的香草精搅打均匀;

6.分3-5次加入打散的蛋黄,搅打均匀,同样分3-5次加入牛奶,搅打均匀(加牛奶的步骤,本图中没有,如果搅打的过程中有些许水油分离的现象,可以加一大勺低粉再搅打);

7.另取一盆,加入蛋白和剩下的50克糖,打至九分发;

8.分两次将打发的蛋白加入步骤6中,用橡皮刮刀以不规则方式拌匀,注意不要划圈;

9.加入过筛的粉类;

10.用橡皮刮刀翻拌均匀,同样不要划圈;

11.加入巧克力酱;

12.拌成均匀的面糊;

13.硅胶模内垫入油纸托,将面糊抹入杯中;

14.在面糊表面均匀的撒上烘培用巧克力豆;

   烤箱预热,180度,上下火,中层,20分钟左右。

    俺这个做得跟开花酥似的玛芬,卖相不咋的,味道倒还不赖,就是口感稍硬了一点点,所以各位想做话,请一定吸取我的教训,记得加牛奶哦!
