一锅两菜之二:【咸菜猪肚汤】&【鸡蛋羹】

在潮汕地区,猪肚是非常受欢迎的食材,价格不便宜,尽管如此还常常供不应求。曾经,我周围的一些潮汕朋友,回家的时候总喜欢带上一些猪肚回去,自家吃的同时还分给亲戚朋友们。让我这个来深圳前包括猪肚在内的一切猪下水都不沾的人,一度非常不理解。

 

直到好久之后,在众亲友的劝说下,我闭上眼睛,捏着鼻子喝下了人生第一口【咸菜猪肚汤】,入口完全没有想象中的异味,有的是浓浓的胡椒味,还有淡淡的咸菜味,似乎还挺鲜美,我一下子喜欢上了这味道。其实直到今天,我都没弄清楚,我到底是因为猪肚喜欢上这道汤,还是因为胡椒的味道而喜欢上的。要知道,我可是辛辣控,一切辛辣、刺激的调味品我好像都挺喜欢的,花椒、胡椒、孜然、咖喱…..辣椒就一般般。

 

【咸菜猪肚汤】算得上一道经典的潮汕汤品,家人说它能散寒、开胃,增进食欲,还有养胃补虚的功效,放了胡椒还能够去湿。我体质偏虚寒,回婆家就常能喝到这汤,现在我也能自己做吃的了,婆婆就给我买了一堆胡椒,可我比较懒几乎没做过这汤。这次弄了个多功能的新锅,正在热乎劲,赶紧做上一次,好锅再加上我比较自信的厨艺,味道好得没话说。炖汤的时候,顺便蒸上一份鸡蛋羹,一锅同时做两道菜,节省燃气,还能减少PM2.5的产生,非常方便。

【咸菜猪肚汤】

主料:

猪肚           1个(500g左右)

 

辅料:

猪扇骨         1个(500g左右)

潮汕咸菜       200g

 

调料:

             适量

食用油         少许

白胡椒颗粒     20g

 

【鸡蛋羹】

主料:

鸡蛋            2

 

辅料:          

              1

 

调料:

              少许

香油            半茶匙

蒸鱼豉油        1茶匙

做法:

1. 猪肚内外洗干净,猪扇骨洗净剁块;

2. 猪肚、猪扇骨分别焯水后,用温水冲洗干净,沥干水分待用;

3. 潮汕咸菜洗净切块,白胡椒颗粒冲洗干净用硬器稍许拍碎;

4. 将白胡椒颗粒装入猪肚里;

5. 将装好白胡椒的猪肚,连同猪扇骨一起放入钻石锅,并加入足够量的清水;

6. 开中火煮,煮滚后,转小火;

7. 盖上锅盖,炖1.5小时;

8. 1.5小时后,关火,让猪肚呆在锅里自然冷却;

9.  猪肚冷切后捞出,并将原汤过滤留用(猪扇骨另作他用);

10.将猪肚里的胡椒倒出,并将猪肚切成厚片;

11. 钻石锅洗净擦干后,倒入少许油烧热,下咸菜煸香;

12. 将猪肚放回锅中;

13. 将过滤后的原汤倒回锅中;

14. 中火烧开后,转小火再炖20分钟;

15. 炖煮的过程中,将鸡蛋敲入空碗打撒后加适量水和盐调匀,并将葱切成葱花;

16. 将蛋液过滤到蒸碗中;

17. 最后10分钟的时候,打开锅盖放入蒸格,放入蒸碗,盖上盖子,再继续完成加热;

18. 时间到关火,抬出鸡蛋羹,撒上葱花,淋入蒸鱼豉油和香油,并按口味给锅中的汤调盐即可。

TIPS

1.胡椒的量可按喜好增减;

2.切咸菜前先尝尝,如较咸要先用水浸泡;

3.炖原汤的猪扇骨捞出来后,可拆下肉加喜欢的调料炒成小炒肉;

4.猪肚汤炖好后调盐的时候,要注意咸菜有咸度;

5.不同时蒸蛋羹单独做猪肚汤的时候,则省掉151617步,及18步的前半部分。
