* this outstanding grower estate has been entirely biodynamically farmed since 2004;

* this cuvee (debut vintage 1990) is made exclusively from two nearby old vine Chardonnay parcels located on the heart of the Cramant slope, the 45-year-old parcel Bourrons du Levant & 75-year-old parcel Le Fond du Bâteau, each about 50 ares in size;

* exclusively indigenous yeasts for the primary fermentation conducted mainly in small oak barrels and large oak foudres, with a small portion of the wines fermented in stainless steel tanks for overall balance;

* dosage @ 2g/l.

Penetrating scents of peppery & saline minerality attack the nose first, gradually giving way to waxy aromas of Mirabelle, lemon & green pear.

Explosive mousse & forceful, savory chalkiness electrify the taste buds, encasing & carrying the fresh, creamy fruit of Mirabelle & lemon onto the vibrant, lingering finale.

With the energetic bubbles, the mineral power is so demanding that I opt to decant it towards a still white wine for better appreciation of its alluring texture, the grand creaminess & subtle oiliness from the concentration, refinement & completeness of Cramant old vine Chardonnay raised largely in old oak vats.

With more aeration, an intriguing yeast-complexed iodine tone emerges. The mineral depth still pervades the palate, while your warming stomach tells the hidden yet real vinosity.
