Extremely pale greenish yellow hue with reflections of jade. Snow-white mousse.

First nose of white-peppery chalk, soon interwoven with emerging perfume of white flowers and passion fruit. The teasing mousse coat the taste buds with fine-grained, white-peppery chalky minerality -- the mineral expression is original and persistent, yet in no way severe or austere, instead crystalline and exquisite. This is originality and elegance in perfect balance.

With more time in the glass and gradual dissipation of mousse, more rounded nuances (apricot and fig) emerge, quietly tempering the stony minerality.

This fine breed combines teasing vitality with leisurely poise. Persistent freshness. Unhurried evolution. 

One hour after popping the cork, the bouquet hits the 'sweet spot' with a charming combination of soft goat cheese and crystalline chalk (while, on the palate, the acidity becomes more pronounced, amplifying the stony minerality).
