Rose d’Assemblage; Grape Proportions: 60% Pinot Noir, 40% Chardonnay

Well chilled. Served upon uncorking. Lovely salmon-pink, with reflections of copper.
Truly
Initially, a very
deep nose of earth cellar, smoke, burnt toast and black tea.
Instantly appear more opulent aromas of dried fruits, fig and wild
berries (wild strawberry and raspberry). The taste is a bit tight
and austere at the
4 minutes after uncorking: scents of sandalwood now penetrate the seductive aromas of naturally sweet, ripe red fruits.
10 minutes: on the nose, a real harmony of the natural nuances: sandalwood, chalk, wild strawberry, raspberry and dried fruits. On the palate, the earlier tightness and austerity is gone: now the entry is very crisp; the mid palate is vibrant and focused; and the finish is of classic DP elegance – a merest touch of fine bitterness.
17 minutes: a lovely meaty, minty Burgundy-Red-like bouquet! Gorgeous!
The taste structure grows in dimension, with fleshy, almost chewable fruits. Luxurious!
34 minutes: an
ultra-sophisticated spectrum of nuances: black tea, toasted bread,
chalk, wild berry fruits, meat and mint. The taste is of equivalent
sophistication, with fleshy, naturally sweet red fruits standing
out and an
45 minutes:
Decadent Pinot nose. For the taste, supple red fruits spiced by
flavor of
54 minutes: Aromas
of butter and vanilla now
1 hour: Rich, concentrated, sweet red fruit aromas on the nose, lifted by refreshing minty scents. On the palate, still lush, supple red fruits of natural sweetness with no sign of decline.
1 hour and 33 minutes: perfumed sandalwood mingles with overripe, decadent fruity aromas.
1 hour and 35 minutes: the taste is fleshy and vinous -- the chewable red fruits are seasoned by flavor of cinnamon and chalky minerality.
1 hour and 37 minutes: the taste layers embrace goodies of butterscotch and chocolate. It seems to have taken so long for the evolved Chardonnay to finally penetrates the unctuous Pinot fruits!
2 hour and 10 minutes: scents of walnut oil mingle with sweet Pinot aromas. On the palate, assertive butterscotch flavor mingles with the still fleshy red fruits, finishing on fine bitterness.
2 hour and a half!
