Curious to compare, on the very next day, Aug 29, I opened another bottle with spring-leaf-colored label, which I bought in Shanghai in May, 2009.
Served upon uncorking, then affixed champagne stopper and kept in refrigerator.
This bottle, however, is warmly generous and totally satisfying with immediate and direct charm.
After
just a flash of green vegetal note, the nose opens with toast and
hazelnut. And the palate starts with beautifully ripe acidity and
intense toasty flavor. It constantly evolves in the glass,
unfolding breath-taking peacock-tail spectrum of aromas and flavors
ranging from peachy fruit, coffee, white chocolate, cream,
nut-toffee to roasted hazelnut, spice, toasted bread, and then the
palate thins up with only candied fruit at around 40 minutes after
uncorking – just when we are worrying that it starts to drop, it
comes back in shape again – coffee, cholocate, toffee, toast and
this time adding new elements of butter, butterscotch and roasted
almond.

Though the evolution is relatively quick, it does hold up well for around 1 hour and 20 minutes, then thinning up again to candied fruit only, but this time no way back…
