Dom Perignon 1985: fresh out of the dark

Served upon uncorking, then affixed champagne stopper
Opulent on the nose right from first pouring: chocolate, coffee, nut-toffee, and then turning subtle nuttiness. Truly refined!
But the palate is surprisingly tight and discreet for the first 1.5 hours! Yet this is exceedingly promising with fresh, tight fruit (citrus) and underlying extracts, well supported by healthy acidity – indicating there is much to happen.
Another
pouring at around 1.5 hours after uncorking, “Cheese!” my buddy
Johnny discovered to our delight. Though the three of us used all
different types of Champagne glasses, there is a distinct flash of
aged cheese smell from all the glasses --
And
now, the palate beautifully unfolds: nut-toffee, chocolate, and for
me,
Overall, this one is
surprisingly fresh and healthy for her age, even though most of the
vigor (effervescence) has gone (this is the original release of DP
85, not the late disgorged “Oenotheque” version). I think the
better-than-expected healthy condition must have something to do
with the fact that this original release bottle had always stayed
in total darkness -- inside the original gift box
