@ Japanese restaurant 串若丸
Medium amber color with very tiny
and few bubbles.
Big nose with so complex and integrated bouquet of
toffee, butter, caramel, mineral and oxidized notes as well as some
noble rot sweetness. You can
simply tell from the color and nose that this
is a wonderfully mature champagne for sure.
The palate is lush and full. With very little
effervescence and molten mousse, this is more wine than champagne
now. The complex palate can be
best described as midway between aged Burgundy
white and Sauternes, with fine elements of orange peel, citrus
fruit, toffee,
roasted coffee, roasted hazelnut
and minerals fully integrated - there is even
exotic fruit flavours of ripe mango. All wrapped in a very silky
texture. Wonderfully accomplished champagne,
though the finish is bit short.
This is apparently over the peak now,
but really like a
sentimental scene of beautiful sunset which evokes
unforgettable memory of those good old days...Impressive
wine experience. But do drink up if you have any
left in your cellar.
