烹调重皮蟹以饭蒸为宜,做法不算复杂,但要用心。挑蟹时千万不能卖断脚的,免得蟹膏从断处流失了;而且要原只蒸,万万不可切开,用尖头筷子在腹部蟹心处戳一个洞,那蟹便死了,就不怕它再挣扎弄断了腿脚;先煮一点饭,等饭半熟的时候就可以放蟹了;蒸的时候要把它反过来,蟹肚朝上,切一片姜把蟹心的那个小洞盖住,避免蒸汽进去坏了味道,也随便让一点姜汁稍微流进脂膏里,醒醒味、驱驱寒。

黄皮,也称狮头鱼、棘头梅童鱼,石首鱼科。体延长,侧扁,长达50厘米以上,灰褐色。头尖长,口大。牙尖锐。尾矛状。以小鱼、虾类为食。是一种常见的食用鱼类。
