主料:草鱼一条
配菜:腐竹、豆皮、洋葱、蒜苗(这个配菜可以随意,一般店里面都放蘑菇、莴笋、芹菜,什么都可以随你喜欢)
调料:朝天椒、灯笼辣椒、滋粑辣椒、葱姜蒜、料油(底下有制作方法)、老干妈辣酱、花椒,小香葱、味精、鸡粉、味极鲜、精油(饭店专用)、魔辛料(饭店专用)。

朝天椒泡热水里面,然后打碎做成滋粑辣椒。

料油:
下面是制作料油,香不香就看料油了,料油再加工就是老油,饭店都是反复使用的!!我也是吃完把老油控出来以后炒菜或者做烧烤油都很好吃!!
主料:鸡油4斤。
香料:草果、甘草、肉寇、白芷、香叶、丁香、桂皮、肉桂、八角、小茴香、葱姜蒜末、精油(饭店专用)。
首先鸡油解冻

凉水冲洗

控干水分倒入锅里炼制

差不多快好了,把油渣捞出来

油温降至5成热后,先放入葱姜蒜末,然后放香料,中小后炒制15分钟!!

炒制好后,捞出香料,放入精油(饭店专用)!凉冷后倒入油壶待用!!

切好辅料:豆皮、腐竹、香葱、葱姜蒜末。
然后再切大段葱、大块蒜、大片姜,炒料到最后时放!

烤鱼:
把腌渍的鱼用清水洗净,然后刷上料油,上烧夹烤制
