上海裕景大饭店谈2009年“洋厨房”颁奖盛典

 

华美典雅的金色会场,精致的晚宴,无微不至的服务,妙趣横生的节目,激动人心的颁奖典礼,去年11月26日,上海裕景大饭店为我们精心演绎了一个激情洋溢的夜晚——洋厨房2009年度颁奖盛典。这是继2007年12月7日第一届和2008年11月28日第二届洋厨房年度颁奖盛典之后,裕景大饭店首次以活动的主办方之—参与其中。酒店从最高管理层到服务人员的整个团队,本着主人翁的精神,好谋而成的态度,分段治事的管理,不疾而速的执行,打造出无与伦比的晚会盛宴。而酒店也借此盛典契机,全方位地展示了自身的硬件设施、服务、餐饮及团队协作精神,充分证明了裕景承办挑战性活动的能力。

 

作为上海外语频道,《大酒店》杂志和新浪网三大媒体年度重头戏“洋厨房”颁奖盛典活动的主办方之一,大家很想了解上海裕景大饭店是如何成功组织这么一个云集了京、沪、杭州、苏州、昆山等众多国际酒店高层人物、上海部分领事馆总领事及各大媒体出席的大型盛典的。所以,新年伊始,我们非常荣幸地邀请到上海裕景大饭店在此次活动中的主要策划团队来给我们讲述一下晚会背后的故事。他们是酒店总经理欧锦辉,餐饮部副经理许永刚,宴会厅经理金佳俊,酒水经理周力俊,西餐行政总厨阿尔弗雷德及市场传媒总监毛明宇。

 

《孙子兵法》云:“以治待乱,以静待哗,此治心者也”。欧锦辉先生作为酒店最高管理者,就是那个统领全局、运筹帷幄的治心者。在接受访谈时,欧锦辉先生将此次活动的成功归结于整个团队的热忱和凝聚力:“一滴水只有放进大海里才不会干涸,一个人只有当他把自己和团队融为一体时才有力量。力量是从凝聚中来的,荣誉是从集体中来的。而以往两届颁奖礼对我们来说,则是宝贵的活动承办实例,为我和我的团队圆满打造此次盛宴提供了高度的参考价值。”欧锦辉先生提到最多的就是酒店团队的配合,他非常自豪地表示:“我们证明了上海裕景大饭店具备完善的酒店设施和优质的酒店服务,这里拥有着一批经验丰富的酒店团队成员。这次成功源于我们集体中每一个人的努力和智慧。”

 

访谈中,欧锦辉先生提到整场晚会相当重要的一个环节,就是如何协调好所有的赞助商。这就要归功于酒店的餐饮部副经理许永刚先生。如果说晚会如同一支交响乐,赞助商就好比各种演奏乐器,而他就是指挥家,精湛的指挥协调加上动人的乐器演奏才能成就雄浑震撼的交响乐。作为此次活动幕后的关键人物,他是一位不折不扣的总协调。许永刚先生说道:“今年的颁奖礼已经是第三届了,而我们又是一支成熟而有经验的团队,因此工作流程较为顺畅。”许永刚先生非常注重活动中的细节,环环相扣,滴水不漏。他自酒店开业以来,一贯谨慎、细致的工作作风已在酒店中为大家所熟知。活动的准备过程中,赞助商的协调,餐具、酒、鲜花、食物、饮料、玻璃器皿,每件将于晚会现场呈现的物品赞助商都要经过他本人的一一审核。不仅要确保上佳的品质,还要符合众多贵宾的品味和审美需求。

 

    一个完美的晚宴需要温馨典雅的氛围、细致周到的服务,当然更少不了一顿丰盛的晚餐。作为行政总厨阿尔弗雷德先生自然功不可没。这并不是一顿简单的晚宴:第一,参与的众多嘉宾中不乏来自酒店高层人士,正所谓众口难调,更何况参与其中的都为餐饮界的行家;第二,如此规模宏大的晚会如今已是第三届,如何推陈出新,做到与以往两届有所不同。第三,如何确保从菜品的原料供应到最后送到客人餐桌上这一整条物流程序的有条不紊也是件非常不容易做到的事。但是在他带领下的18位厨师共同完成了这个艰巨的任务。得到几乎所有嘉宾对佳肴的一致褒奖,“有一种力量是从跳动的心中发出的,它会指引你去做你认为重要的事,并且一定要竭尽全力,这就是责任心”阿尔弗雷德說。

 

    晚会就像一架庞大运行的机器,而赞助商好比那些核心关键的机器部件。众多世界一流的赞助商让参与晚会的每个嘉宾感受到了酒店的高贵格调和不言而喻的水准。让我们再回顾下酒店为我们精心打造的场景吧:会场布置以金色为基调,流光溢彩般地烘托出梦幻的气氛,花缘文化传播有限公司的鲜花恰到好处地布置在餐桌及舞台上,高贵典雅;世界第一的现购自运制商业集团麦德龙作为整场晚会的白金食品赞助商,为当晚的所有宾客提供出“从田园到餐桌”的最优质的饕餮盛宴;餐桌上精致的酒杯是由拥有尖端的设计工艺和超前的设计能力的上海雅家时尚瓷业有限公司提供;酒店还和行销世界130多个国家的葡萄酒市场的酒类供应商桃乐丝为晚宴的每道佳肴搭配了相应的美酒;还有那些熠熠生辉的瓷器奖盘,是由新加坡著名瓷器Luzerne提供,在晚会的前几天酒店就为保障这重要的易碎品而忙碌着,直到完美地呈现给获奖者……诸如此类,举不胜举。

 

宴会厅经理金佳俊先生作为此次上海裕景大饭店“洋厨房”盛典服务的主要负责人,他在采访中显得很谦虚:“细节决定成败,厨房上菜的时间,服务生的服务水准和准确性,舞台协调等等,我们所做的都是要求细致完美的工作,要考虑到方方面面。”

 

洋厨房颁奖晚宴是一次由上海外语频道,《大酒店》杂志、新浪网和上海裕景大饭店共同举办的,并且通过电视转播,网络及杂志同时报道的酒店盛事,可谓盛况空前。在市场传媒部总监毛明宇小姐的努力下,酒店成为了主办方之一,同时她也充分做好了酒店与媒体主办方之间的沟通,通过媒体的力量,让所有关注酒店的消费者感受到了上海裕景大饭店缔造的这个经典之夜及举办各类大型盛典晚宴的能力。毛小姐曾经也参与并组织过很多大型的活动,但是像此次聚集了上海等地顶级酒店专业人士的盛典还是第一次。如何使会场的布置高贵隆重并附有裕景特色,如何使节目精彩纷呈并使众人得以参与……最终晚宴的完美呈现,点点滴滴都是大量的幕后工作的结果。

 

    当你接过邀请函,当你在前台签到,当你步入会场,当你端起酒杯,当你拿起刀叉享用晚餐,当你满怀喜悦捧起奖杯,当你陶醉在那样一个光芒璀璨的夜晚,你所看到的,感受到的,触摸到的,无一不饱含了上海裕景大饭店整个团队在背后的辛劳付出。正所谓博观而约取,厚积而薄发,这或许就是裕景的真实魅力所在。在此,由衷地感谢上海裕景大饭店为我们的2009年留下了最难以忘怀的回忆!

 

Sophisticated gold-accent decor, extravagant dinner, warm hospitality, attentive service, enthralling entertainment and touching award-giving ceremony constituted “You are the Chef” Annual Awards Dinner Party 2009, to which the 5-star The Eton Hotel Shanghai played host on Nov 26, 2009. It was the third time the luxury hotel co-organized the event, which debuted on Dec 7, 2007. The hotel—from management to the entire staff—had been dedicated to orchestrating a successful event with unrivaled enthusiasm, in which its facilities, service, food and teamwork spirit combined to prove the capability of an established hotel to host big events.

 

It is natural that people want to know how the hotel has successfully hosted the event, which drew huge crowds — consuls based in Shanghai, government officials and the media as well as senior executives with international hotels in Beijing, Zhejiang, Jiangsu, Sanya and Shanghai. To satisfy their curiosity, Grand Hotels invited the planners directly responsible for the annual awards ceremony at the Eton Hotel Shanghai—Michael Ow (General Manager), Richard Xu (F&B Assistant Manager), John Jin (Banquet Manager), Michael Zhou (Beverage Manager), Alfred (Executive Chef) and Michelle Mao (Director of Marketing Communication)—at the start of the year for behind-the-scene stories.

 

In his masterpiece The Art of War, Sun Tzu said: “Disciplined and calm, to await the appearance of disorder and hubbub amongst the enemy:—this is the art of retaining self-possession.” (tr. Lionel Giles) Mr. Michael Ow, the general manager surrounding whom the whole plan had been devised and implemented, gave the credit to the entire team during the interview for their devotion and cohesiveness, observing: “A water drop never dries up in the ocean, and an individual never runs out of power in his team. Our strength came from the whole team, and our honor also attribute to the whole team. The past two award giving ceremonies were precious experience to us, and brought remarkable reference to our practice.” With the greater part of his comments devoted to teamwork and co-operation, the general manager proudly added, “The The Eton Hotel Shanghai is proven to be one of the finest in town capable of hosting an event like this, backed up by an experienced team. The success is the result of the dedication and intelligence of every staff.”

 

He frankly admitted that the biggest challenges had been coordinating between the sponsors and the menu, giving the credit to F&B Assistant Manager, Richard Xu, under whose baton the orchestra, consisting of all the sponsors, gave an enjoyable concert that was the award dinner party. “As it was the third time the award giving ceremony had been held, we had the experience and a mature team to expedite the process,” said Richard, F&B Assistant Manager and a key figure backstage. He added that coordinating between the sponsors had posed a big challenge. The head of the F&B department was obliged to personally interview every sponsor and check up items like dinnerware, wine, flower, food, beverage and glass to ensure superior quality and that the attendees’ aesthetics and tastes would be met, however difficult.

 

A successful dinner party is made up of sophisticated ambiance, attentive service and, above all, extravagant dinner in which Alfred, the executive chef, played a vital role in this case. Several reasons account for the fact that the dinner is far from simple. One, you can’t please all, especially when present are many senior hotel executives and experts in food and beverages. Two, the hotel has to show something new and different to make this grand event as outstanding as it had been as the past two years. Three, how to ensure that every link is perfect and every step properly taken in such a big event, from sourcing ingredients to serving dishes? Under pressure, some will lose spirit, some just go forward. The careful planning and execution of Alfred and his team of 18 chefs bore fruits—the menu and food earned great admiration of the guests. “It was the power of concentration and determination, and it leads you to go all out accomplishing the important things in your mind, and the power is called responsibility.” Said Alfred.

 

If we compare the dinner party to a giant machine, sponsors must be the core components. A good many first-class international brands were involved to raise the hotel’s standards in hosting events and enhance the taste. Now let us look back on the event evening: The carefully constructed decor is in glittering gold to make for a dreamy atmosphere. The stage is adorned with flower works designed by Shanghai Huayuan Culturecom, a promising French floral artist and so is every tabletop. Metro, the world’s top cash and carry business corporation was the platinum food sponsor of the dinner party, provided a feast with exquisiteness deliciousness of the highest quality for the guests. No dinner party is perfect without good wines. Torres China provided us a fine collection of wines, whose mellow taste and light texture have the power to delight and intoxicate. Torres supplies wines to over 130 countries and regions worldwide. Some of the staff have been busy safeguarding the trophies, shiny glass plaques made by Luzerne, a well-known brand from Singapore defines the art and beauty of the table wares, for a couple of days before they are eventually presented to the winners, undamaged… There are so many that we can’t name one by one.

 

John Jin made modest remarks during the interview. The banquet manager has been working with the hotel since day one and personally engaged in the two “You are the Chef” Annual Awards dinner parties. “I have been working on trivial things, trying hard to take every respect into account.” People say that the devil is in the detail, such as the high-quality service and inviting atmosphere. To keep the serving in time, and to coordinate entertainment, all these were part of maintaining the service standards and accuracy, exhibiting professionalism and strong sense of responsibility.

 

Michelle Mao is the hotel’s Director of Marketing Communication. It was through her ceaseless efforts that the the Eton Hotel Shanghai had been involved in co-organizing “You are the Chef” Annual Awards Dinner Party together with ICS, sina.com and Grand Hotels. The unprecedented event was not only televised, but also reported in detail by sina.com and Grand Hotels magazine, and Ms. Mao, hotel’s Director of Marketing Communication had been instrumental in the hotel’s communication with the media partners through whose coverage the hotel’s ability to host large events and social activities was shown to the customers. Ms. Mao has organized many grand events before, but it was her first experience to participate in the organization of such an grand evening party which drew professionals from top ranking hotels in Shanghai and several other cities. How to make the venue elegant and stately and presents the characteristics of Eton Hotel Shanghai, and how to make all the performance attractive and entertaining to all the audience… The final perfect dinner party is the result of the hard work in various aspects behind the scene. 

 

When you received the invitation, signed the register, walked into the ballroom, raised the wine glass, picked up the knife and fork, or held the trophy high, when you were intoxicated with the night of awards, did it occur to you that what was in front of you, what was in your hands and what you could feel were owing to the longtime dedication of the hardworking hotel staff? Rome wasn’t built in a day. Maybe this is the genuine appeal of an established 5-star international hotel. We would thank the The Eton Hotel Shanghaifor giving us the most memorable experience in 2009.
