2009年9月28日,由上海烟草(集团)公司投资兴 建的上海王宝和大酒店有限公司双喜临门。时值王宝和大酒店成立10周年庆以及全新超豪华五星级酒店——上海大酒店,即将以其独特的风格、优雅的格调、高贵的姿态揭开神秘面纱。《大酒店》有幸采访到上海王宝和大酒店有限公司总经理张积福先生。

 

《大酒店》:请简单介绍下上海王宝和大酒店和上海大酒店各自的特点及顾客消费群的区别性?

 

张积福先生:2009年9月28日是上海王宝和大酒店成立10周年,作为沪上知名的涉外四星级酒店,以其绝佳的地理优势和商务氛围以及著名的王宝和蟹宴,成为商旅和度假人士在上海的理想居所,10年来取得了一定的知名度。而仅一街之隔全新开业的超豪华五星级酒店——上海大酒店,外观稳重大气,内部装潢豪华惊艳,设计风格独特、格调高雅,它所针对的客户群更偏向于高端高消费的商务或度假客,并将与坐落于南京东路-外滩钻石地段的各大国际品牌酒店一起,形成超豪华酒店群体,共同展现上海的都市魅力。

 

《大酒店》:以五星级标准建造的上海大酒店相对于王宝和大酒店,在功能上有哪些补充或加强?

 

张积福先生:全新开业的上海大酒店配备先进的楼宇自动化技术及独到的门禁系统,拥有40平方米以上的豪华客房及10平方米以上宽敞的卫浴空间,干湿分离双台盆全进口卫浴设施,大屏幕液晶电视,可提供不间断充电功能的保险箱等高端设施,为商务客人提供便捷的安全保障。更值得一提的是,酒店拥有沪上首屈一指的复式总统套房,并配有一处闹中取静的空中花园。另外,健身中心、室内游泳池、桌球房、桑拿按摩、美容中心一应俱全,还设有商务中心、礼宾部、10部最新一代奥迪斯高速客用电梯。除了2.8米挑高空间可停放各种大型车辆的地下一层车库外,在寸土寸金的黄金地段更拥有超过150个车位的地下1-3层停车库。

张积福先生:上海大酒店大堂酒廊开阔的上部空间,伴随流淌的音乐,是商务会谈、亲友
小憩的理想场所。一楼咖啡厅提供环境优雅的自助晚餐,尽显上海都市的浪漫情调。二楼奢华的高档法式餐厅,由拥有50年厨龄,法国Maitres Cuisiniers协会顶尖厨师Mr. Robert Lucien Caillault担任总厨。他曾在日本大仓饭店集团工作长达10年,为法国菜在日本的普及和推广作出巨大贡献,将为宾客带来正宗的法式大餐和上选葡萄酒。配有零点餐厅以及可分割式贵宾包房的三楼宝粤轩诚邀当代香港厨艺大师林炎发先生亲自掌勺正宗港式粤菜。林师傅系“香港食神”龙甜师傅的得意门生,并为满福楼品牌在沪的创建和发展作出了巨大贡献,现任法国国际厨皇美食协会会员主席。林先生此次加盟上海大酒店宝粤轩,将分享他精湛的厨艺,诚邀您品尝粤菜之精华,体验美食之艺术。

 

《大酒店》:位于四楼的椭圆型宴会厅作为商务会议和婚宴等主题活动的不二之选,请问该宴会厅在整体设计上有何吸引客源之处?

 

张积福先生:上海大酒店一大亮点便是那悬浮于楼体中央的椭圆型大宴会厅——上海厅,在夜间宛如明珠,晶莹剔透,是现代与经典的完美结合。除了无柱式和7米超高空间的设计概念外,还配备最领先的高科技会议设备。七种可变色灯光以及可遥控式追光灯可根据客人要求提供极具个性化的会场氛围。400多平方米宽敞的序厅空间,加之多种不同规格和设计风格的宴会厅,成为各类商务会议和主题宴会的绝佳选择。

张积福先生:王宝和蟹宴的奥秘可以总结为以下几点:

高雅的用餐环境五楼宝和厅规模宏大、气势非凡,洋溢着浓郁的中式气息,大厅可容纳350人同时用餐,另有九间江南风格的包房。

正规的采蟹渠道阳澄湖蟹季,隔天由选蟹经验丰富的师傅到阳澄湖定点基地挑选,用来烹制蟹菜的蟹粉均是以阳澄湖大闸蟹现拆现烧,保证用料新鲜,原汁原味。

独一无二的蟹宴王宝和蟹宴具有选料讲究,刀工精细,色彩淡雅,口味清淡,滑嫩可口,原汁原味的特点。数十道菜“蟹始蟹终”,不仅鲜美无比,而且栩栩如生,风格独特。

改良后的蟹八件据记载,明朝初年的能工巧匠创制出一套精巧的食蟹工具,称之为“蟹八件”。这八件经改良为“蟹二件”后,又在王宝和大酒店重现,助您尽享蟹的鲜美,回味无穷。

Central Hotel Shanghai will embrace a sister hotel, Grand Central Hotel Shanghai, at its 10th birthday on 28 September, 2009. Both hotels are under the banner of Shanghai Central Hotels Co., Ltd, which is invested by Shanghai Tobacco (Group) Corporation. The 5-star Grand Central Hotel Shanghai is one of the newest additions to the “hotel belt” in the heart of Shanghai. Grand Hotels had the honor to meet with Mr. Zhang Jifu, General Manager of Shanghai Central Hotels Co.,Ltd before the opening of this elegant and tasteful luxury property.

 

Grand Hotels: What are the unique features of Central Hotel Shanghai and Grand Central Hotel Shanghai? How about their respective target guests?

 

Mr. Zhang Jifu: Central Hotel Shanghai will celebrate its 10th anniversary on 28 September, 2009. Centrally located in downtown Shanghai, the four-star hotel is best known for its warm hospitality and the extravagant “crab dinner”. Grand Hotels: The 5-star Grand Central Hotel Shanghai is obviously a notch above the 4-star Central Hotel Shanghai in terms of facilities. What particular facilities and amenities are available?

Grand Hotels: The oval ballroom on the fourth floor is ideal for corporate conference and wedding ceremony. What is so special about the design?

Grand Hotels: What is the secret of Central Hotel Shanghai’s signature “crab dinner”?

 

Mr. Zhang Jifu: The secret of the “crab dinner ” can be summarized as follows:

Inviting Atmosphere The capacious Banquet Hall on the hotel’s fifth floor can accommodate up to 350 guests. It features an elegant decor with influences of traditional Chinese art and culture. Diners can choose one of the nine private booths which are tastefully appointed in various styles typical in the Yangtze River Delta region.

 

Strict Sourcing Standards During the crab seasons, we send experienced buyers to select raw crabs at designated crab farms in the Yangcheng Lake region and deliver them back to the hotel, alive. Raw crabs are prepared on the spot to ensure 100% freshness. In so doing, the original flavor can be retained, as well.

The Crab Dinner The “crab dinner” features dozens of carefully prepared innovative crab delights which boast “choice ingredients, expert cutting, seductive color, light taste, tender texture and original flavor”.

8-Piece Kit and 2-Piece Kit It was recorded that the traditional 8-piece kit used to eat crabs was invented by craftsmen living in early Ming dynasty. 8 pieces were later reduced to two pieces and handed down to generations. The 2-piece kit is available at Central Hotel Shanghai.

Matching Wine The “crab dinner” tastes best if paired with “Central Hotel Shanghai Crab Dinner Wine” (a kind of rice wine), and the two are jointly known as the “best of best”. The wine is said to be effective in dispelling cold, for crabs are coldnatured. With wine cup in one hand and crab’s pincers in the other, you’ll feel your life is full.
