I was so excited about today’s
shoot, as everything just seemed to fall so beautifully into
place.
When it comes to
professionalism and creating a unique experience the Regent
Shanghai excels. Top on my list for Sunday brunches, they serve
everything your hearts desire and to top off the great food and
never ending flow of champagne they also have lots of fun
entertainment like dancers and magicians. But what I really loved
about this episode was that I was surrounded by people that do
their job really, really well.
The morning started off with a
friend of mine Xu Lin, who has been a make-up artist and hair
stylist for over 6 years, coming over to help me create a new look
for the show. Unlike normal make-up TV make-up requires a special
talent and skill as the harsh lights and camera are very good at
changing colours and distorting images. Xu Lin pulled out her boxes
of make-up and numerous brushes and in just 45 minutes I was
looking better than ever. Before we gave the final “thumbs up”
though we decided to wait until I was under the lights and in front
of the camera.
By the time I arrived at the
supermarket everyone was there ready to start working. What makes a
good chef for a TV show? Someone who is not nervous, who knows his
job very well and who has a happy and easy-going disposition. Chef
Henry Yang is just this, and because he had been on the show
previously, he knew exactly what to expect. I love working with him
because he always has a lot of really good information to share
with myself and the audience. This week I learnt river fish have
more bones than sea fish and that celery and lily bulb not only
taste delicious together but are great for helping cool the body
down during summer and help your skin look eternally youthful.
That’s the type of information that good chefs know but it’s hard
for us average people to find out and is normally even harder to
get the chef to tell us.
After finishing up at the
supermarket we headed back to the Regent for lunch and an afternoon
of filming. It is at this point where the help of the PR/
Communications manager really is important. The difference between
a few hours for a film or TV shoot can calculate into a lot of
dollars and a lot of happy or grumpy people. Jennifer Hong had
organized and timed everything to the TV and was with us each step
of the way making sure everything went smoothly. It has been common
in the past, for our film crew and the hotel chef to be left to
organize things ourselves, but with the support of the Public
Relations Department we can do things so much quicker. As a result
of Jennifer’s hard work we were able to finish up earlier than
normal with a smile on our faces.
It was only once I had arrived
home though, that I realized how nice today’s experience was and
how I wasn’t totally exhausted like I normally am. I also felt
that I had done a better job as a result of everyone else doing
their job well.
What makes someone
professional? I thought about it for a long time and this is what I
came up with. Professionalism is going the extra mile and putting
effort into the details. It’s about being open minded and
continuing to educate yourself in your field of work, but most
importantly it is about your attitude and the way you deal with
things with a smile on your face.
Incidentally, the
professionalism of these 3 people affected me in more ways than
one:

Xu Lin’s make up was a great success and I was showered with comments of “you look the best you’ve ever looked” and “you look so young today”. A big Thumbs up for the artistic skills of Xu Lin.

Jennifer’s great organization meant I was able to get home early and cook a great dinner for my family. Thumbs up for the great support of Jennifer Hong.

What did I cook? The recipes I just learnt from Chef Henry, and yep they turned out exactly the same as his did. Thumbs up for Henry and his amazing culinary and teaching skills.

谈到专业精神和创造,上海龙之梦丽晶大酒店有着过人之处。首先要提一下酒店的周日早午餐。他们的服务相当周到、细微。菜肴美味、可口,还有无限畅饮的香槟以及魔术和歌曲表演。但真正使我喜欢上海龙之梦丽晶酒店,还是因为丽晶的人,他们的工作非常认真、投入。
拍摄从早上开始,我的朋友徐林--一位从事了6年的化妆发型设计师,来为我打造了一个全新的妆容。和普通化妆不同,电视拍摄的化妆需要一些天分和技术。通过改变色彩和造型来改善刺目的灯光和拍摄,达到完美的效果。徐林小姐打开了她的化妆盒,拿出几把刷子,只用了短短45分钟,我变得美的异常,直到我站在镜头前,她再给了我最后的“定妆”。
当我到达超市,那里所有的工作人员都已经准备开始工作了。怎样的厨师才是一个好的、适合节目拍摄的厨师?答案应该是不紧张,有扎实的专业知识,保持笑容,反应敏捷,厨师杨新毅正是这种类型。因为他曾经上过电视,所以他知道该如何表现。我非常喜欢和他的合作,因为他总能与我以及观众朋友一起分享一些有用的知识。这次节目我知道了原来河鱼骨头比海鱼多。芹菜和百合放一起不但味美还能清热去火,在夏季食用还对你的皮肤都有好处。这就是一个典型的例子。好的厨师知道食料的用处、功效而普通人不会了解,除非厨师告诉我们。
拍摄完超市的部分,我们回到了上海龙之梦丽晶大酒店享用午餐并准备下午的拍摄,而这个时候酒店的公关就显得特别重要。几个小时的电影和电视拍摄的不同在于不仅需要更多的资金还要有更多的乐趣及开朗的人。上海龙之梦丽晶大酒店的公关洪嬑小姐组织得非常好,并保证了节目每个环节都顺利进行。而在过去,往往是我们拍摄人员和酒店的厨师自己来安排组织。而有了公关的支持和帮助,我们的工作进展得更为快速。事实上,在洪嬑小姐的大力协助下,我们的拍摄比平日更早的结束。每个人的脸上都洋溢着微笑。
这是唯一一次我早早地到家。我体会到今天拍摄绝对地顺利,也不感觉到象以前那么累。我以为我今天做得很好,每个人都干得非常棒。
什么能让我们变得更专业?这个问题我考虑了许久,也是我需要不断努力的目标。专业是在每个细节都要付出更多的努力。这样才能在你的工作领域内开拓思路增长眼界,同时还要不断地学习。但最为关键的是你的态度。做任何事都要以快乐的心对待。
