A Spring Lunch Featuring the “Cuisine of the Sun”
This month we present a selection of light and simple-to-make dishes that are popular with gourmets in sunny California, the home of fresh and simple cuisine, a cuisine that you might call “The Cuisine of the Sun.” 
As the largest agricultural producer in the USA, California, where I lived for many years, is a food paradise: food markets and stores are full of  a wonderful selection of foods and fresh produce, including locally grown nuts, fruits, and vegetables, as well as locally produced seafood and meats. Like the Mediterranean areas of Europe, it is famous for its wine, olives and olive oil, all of which play a prominent role in the local cuisine.
With such a rich selection of fresh ingredients, professional and home chefs in California have many foods with which they can create delicious, healthy and attractive dishes. Though not all of these foods are available in China, many are. In addition, many fine local foods not available in California are perfect to create “California-style” dishes.
So why not spend a day in California by making this selection of California-style dishes? This month we present three dishes that are perfect for a light meal on a warm Spring day. The dishes all feature olive oil, a common ingredient in California cuisine, which has its roots in Mediterranean cuisine. We suggest to pair the salad with either the noodle dish or the sandwich. If you are very hungry, then cook all three!
