Here is a borscht recipe for 10 servings: 16 ounces of pork sausage, 3 medium beets (peeled and shredded), 1/2 medium head cabbage (cored and shredded), 8 ounces of diced tomatoes, 3 carrots (peeled and shredded), 3 medium potatoes (peeled and diced), 1 medium onion (chopped), 6 ounces of tomato paste, 1 tablespoon of vegetable oil, 3/4 cup of water

1. Crumble the sausage into a skillet over medium-high heat. Cook until no longer pink. 2. Fill half a medium sized pot with water and bring it to a boil. Add the sausage and cover the pot. Return to a boil. 3. Add the beets, and cook until they have lost their color. 4. Add the carrots and potatoes, and cook until tender (about 15 minutes). 5. Add the cabbage and tomatoes. 6. Heat the oil in a skillet over medium heat. Add the onion, and cook until tender. 7. Stir in the tomato paste and water until well blended. Transfer to the pot. Let it stand for 5 minutes.
