做法:1.鲫鱼剐鳞,剖肚,去鳃,洗净腹中黑膜,留用鱼籽和鱼泡,姜葱蒜和红椒都切碎,装起配用;

2.坐锅热油,加入底盐(这样煎鱼不会破皮);

3.鲫鱼用厨房纸吸干水,放入锅中小火慢煎,煎3分钟左右,翻转煎另一面,把鱼籽和鱼泡一起放入锅中煎;

4.煎3分钟左右,把煎好的鲫鱼移到一边,把姜末、蒜末、碎红椒和豆豉放入锅中;
