Croutons

I'm back.  What, didn't miss me?  I had to take two days off to move to a new apartment.  I'm in the new apartment now, but can't find anything.  Ebike charger?  Change of clothes? Towels?  You know how it is.

My apprentice made some fancy breads while I gone.  He enjoys the barley-beer boule, a nice little bread if you don't overbake it (like the last time we made it, no fault of his).  He tried his hand at French bread.  I think we have the wrong flour for that, though.

The good rye flour arrived, so this weekend I'll try again to make some good rye bread.

I've decided to try my hand at making croutons, and bread crumbs.  These are not profitable items, but if you are used to having them it is a pain not to be able to find them.  I eat mostly salads in the summer, and I will enjoy having croutons.

I'm making plain bread crumbs and Italian bread crumbs.  If only I had a restaurant, I could share my mother's baked eggplant parmigiana.  I can still make it, special order, if you'd like it.  Take it home and finish baking it in your oven, if you have one.

As usual, we'll be gearing up for the weekend.  I'm starting some sourdoughs tonight, to bake tomorrow.  Sourdough bread just gets better with age, so come on down this weekend and grab some.  I'm trying to make such artisan breads in small portions so you can try more than one.

PS I'm still looking for summer help, and for a new baker's apprentice.
