刚看了下日历,

已经是2010年12月15日了,

再过半个月就要跨入2011了,

不知道2012是否真的会来到,

我是不敢看那可怕的电影,心理承受能力有点弱.

拉回思绪.

2011年1月11日 腊八节,

腊八节是一年之中最寒冷的日子之一,

在腊八节这一天,

几乎每家每户都会吃腊八粥.

而在北方很多人家,都会做点腊八蒜.

腊八蒜的做法:  

  此泡蒜多于腊月初八那天泡制,因这个季节泡气温很适宜,故称腊

八蒜

。醋、糖的配量还可 以适当变换,但不可变动过大。冬天经常吃些腊

八蒜,

对人的身体是有好处的,既杀菌,还解毒。成品蒜呈淡绿色,味道酸甜

辣俱全,

十分可口。就饺子吃更是美不胜收。

腊八蒜的典故:

据老人讲,腊八蒜的蒜字,和“算”字同音,这是各家商号

要在这天拢账,把这一年的收支算出来,可以看出盈亏,其

中包括外欠和外债,都要在这天算清楚,“腊八算”就是这

么回事。腊八这天要债的债主子,要到欠他钱的人家送信儿

,该准备还钱。北京城有句民谚:“腊八粥、腊八蒜,放账

 

的送信儿,欠债的还钱。”后来有欠人家钱的,用蒜代替“算”

字,以示忌讳,回避这个算账的“算”字,其实欠人家的,终

究是要还的。老北京临年关,街巷胡同有卖辣菜的,可没有卖

腊八蒜的。这是为什么呢?您想啊,卖腊八蒜得吆喝吧,怎么

吆喝?直接喊“腊八蒜来!”欠债的人听见吆喝心里咯噔一下,

怎么街上还有喊着催债呀!再说了,你一个做小买卖的跟谁算哪!

人家不跟你算就不错了,所以腊八蒜不能下街吆喝,都是一家一户

自己动手泡腊八蒜,自己先给自己算算,今年这个年怎么过。

低温是打破大蒜休眠、激活蒜酶、发生绿变的条件。在色素形成过

程中,γ-谷氨酰转肽酶是必不可少的。“腊八蒜”绿色素的形成

与洋葱红变具有一定的相似性,烯丙基与丙烯基硫氧化物同时存在

时,就发生绿变,存在丙烯基硫氧化物,不存在烯丙基硫氧化物时

,就发生红变。

  蒜酶对大蒜的绿变起着催化作用。腌制“腊八蒜”的醋酸起到

增加细胞膜的通透性作用,使大蒜在不破坏细胞壁的前提下发生绿变。
