我想开家意大利批萨外卖店

认识Jane是通过一个外国朋友的推荐。通过几次电话后,见到本人,竟比想中平实很多。让人惊叹的是她博士后的学历,还有她决定开意大利批萨店的勇气,毕竟对她这样有着稳定收入和较高社会地位的人来说,选择经商还是件挺有风险的事情,她也很诧异我的好奇,在她看来,能做自己想做的事情才是最幸福的。
她说她给自己的现在打90分,虽然开这家店并不像许多人想象那样赚到了很多钱。
有些东西是用钱无法衡量的。
我相信她的用心和快乐。

吉雅诺:想起来都是温暖的
 
知道吉雅诺的,更多的是在武汉生活的老外。这里就像他们在异国他乡的家,想起来都是温暖的,吸引他们的不仅仅是地道的砖灶批萨,和蔼可亲的女主人,还有这里的空气,在香甜中都弥漫着家乡的味道。
 
一堂生动的饺子课
九月的一个中午,一群金发碧眼的外国人聚集在一家意大利西餐厅学习包饺子。老师是一位黑发黑眼的中国女子,手里拿着教义,用流利的英文讲解包饺子需要的材料及过程。随后,她亲自上阵示范,娴熟漂亮的手艺,让现场赞扬声笑声一片。大家在她手把手的辅导下,亲眼见证了中国饺子的诞生。课下,每个人都品尝到了自己辛勤劳动的“果实”,对他们而言,这堂生动的饺子课就是对中国美食文化最形象的感受。
老师是这家意大利餐厅的女主人Jane,而这家意大利餐厅叫吉雅诺。

Jane漂亮转身
Jane是典型的学者气质的商人。举手投足,一颦一笑,都带着腼腆与知性。在创办吉雅诺之前,她在美国一所大学的实验室做生物实验。她的人生故事如同大多数年少出国留学,学成归国的海外学子一样,平凡而丰富。
18岁出国留学,先后在日本,美国待了二十多年,读到了博士后,选择了生物工程。在外人眼里,在实验室做实验是一份稳定体面的工作,薪水丰厚,福利完善,又受人尊重,而Jane却对日复一日,年复一年,一成不变的生活感到厌倦,她觉得自己应该做点什么,只为自己,只为喜欢。然后,她想到了纽约随处可见的砖灶批萨店,想到了自己一直以来喜欢的意大利美食。在回国后没有多久,Jane就毅然辞了工作,在阅马场首义广场开起了吉雅诺。
那是2004年。Jane至今记得开业的头一天,两个老外经过店门口,看到招牌上醒目的“Brick Oven Pizza”,激动惊叫的表情。开业那天,迎接的第一批客人就是这两个外国人,随后第二天,来了十个外国朋友,不错的评价和口碑让Jane对她的江城首家砖灶批萨充满信心。
如今吉雅诺快三年了,凝聚了一批忠实的意大利美食爱好者,他们都是从吉雅诺的砖灶批萨开始,喜欢上这种平凡简单却又回味无穷的意大利菜肴。而Jane一直亲历亲为材料的采购,品种的选择创新,菜谱的系统设计,她笑称这得益于自己有一个生物试验的头脑,让她能精准的把握每一个批萨的每一种配料,保持原汁原味的口感。
从生物实验室到批萨厨房的转变,对Jane来讲,是一次漂亮的转身,在她40多岁的时候,她选择做了自己想做的事情,然后充分享受其中的乐趣。
“这种体验就是一种经历,如果要我对现在的生活满意度打分,我想应该是9分。”

享受美妙的合奏曲
Jane在日本留学时曾专门学习过日本料理,在美国纽约也经常参加短期烹饪学习班,在尝遍各国美食后,她依然最钟情于意大利美食。她说意大利菜简单却不失精致,就像一首美妙的合奏曲带来的感受:回味悠长。虽然它的材料简单,烹饪方法简单,却能把一种味道发挥到极至。
吉雅诺的砖灶批萨,在Jane的严格把关下,用的是进口脱脂芝士,新鲜烹饪的番茄酱,上好的色拉米(一种意大利香肠),每一个批萨,在唇齿间流动的都是浪漫的意大利风情。
这里的玛格丽达批萨非常受欢迎,它的配料里需要一种叫“Basil”的香草,在武汉很难寻觅到,Jane就在家门口亲自种植。春去秋来,每一次的玛格丽达,都是一样的经典口味。
   
推广砖灶批萨就是推广批萨文化
用砖灶烘培批萨还真是件新鲜事。见到吉雅诺的“砖灶”吓一跳:一个巨大的炉子,内部火焰如火舌跳跃,外部电脑控制温度。只需几分钟,弥漫着浓郁香味的批萨就新鲜出炉了。看上去普普通通的炉子,十多万,美国进口。国内一共也只有四台。Jane在美国曼哈顿随处可以吃到这样的大炉子烘培出来的批萨,外脆内软,酥香可口是普通烤箱无法达到的。而只有这种批萨,才能真正代表批萨文化的精髓。
Jane要做的,就是要把在全球都受欢迎的批萨,以最佳的口感引进武汉。
在吉雅诺,一个12寸的批萨只要56元,4个人在这里百元消费就能吃的很饱。Jane说,要消除西餐的神秘化,就必须普通人都能接受。在卖环境、卖品位的西餐风潮面前,Jane的砖灶批萨以平民的姿态征服了本地人,也征服了外国客人。
有一位意大利客人在品尝了吉雅诺的批萨后,称赞吉雅诺是“批萨的天堂”。

我喜欢做文化推广的事情
因为在国外生活多年,Jane也曾有过异国他乡无处倾诉的乡愁,是当地的朋友帮助她走出了心里的寂寞。多年后,Jane希望自己的吉雅诺也能是一个家园,来自五湖四海的外国人在这里聚会,在这里叙旧,在这里结识新朋友,在这里参加Jane为他们精心策划的各类文化活动。
这次的包饺子活动已经是第三次了,Jane还在计划教外国人做糖醋鸡、做汤圆,做团圆宴。她也想为本地喜欢西餐文化的武汉人开办定期英语交流班,或是教他们一些简单的西方菜肴,比如如何做沙拉等,让吉雅诺真正成为中西方文化交流开发的平台。
Jane 为此充满信心,“若干年后,即使吉雅诺不在了,我也会很自豪,这种一手创办的成就感是无法取代的。当然,我希望在武汉到处是吉雅诺的分店,甚至全国。我希望正宗的批萨文化从我手中传播出去,然后遍地开花。”

Giano's――A Warm Restaurant
 
A lively dumpling class
At the noon in September, a group of foreigners were learning to wrap dumplings in an Italian restaurant. The teacher, a Chinese woman, explained the materials needed and process. Her skillful hand won admiration and laughter. Everybody witnessed how the Chinese dumplings were born. Every one tasted his own labor “fruits” after class. For them, this lively dumpling class was a vivid experience of Chinese food culture.
The teacher is the owner of the restaurant-Jane. The restaurant is called Giano's
Those who know Giano's are mainly foreigners in Wuhan. Giano's is like their home in the foreign country. They feel warm when think of it. What attracts them is not only the genuine brick oven pizza, the amiable owner, but also the atmosphere filled with the smell of hometown.
 
Jane turned about beautifully
Jane is a typical businesswoman with scholar’s temperament――coyness and knowledge. She did biological experiments in an American university before she established Giano's. Like most overseas students, her life is common yet rich.
Jane stayed in Japan and United States for more than 20 years after she went abroad at 18. She studied bioengineering and had achieved post-doctoral status. In the eyes of others, doing experiments is a stable and honorable job. But Jane felt bored of the invariable life. She felt she should do something that she liked. And then she thought of the brick oven pizza and the Italian food she liked. Soon after she returned from abroad, she quitted her job and established Giano's in Yuemachang.
It was in 2004. Jane still remembers the first day when how the two foreigners looked surprised as they passed and saw “Brick Oven Pizza”. The two foreigners were her first customers. The next day, more than 10 foreigners came. The reasonable prices and public praise made Jane feel confident of her first brick oven pizza in Wuhan.
It has been 3 years since Giano's was established. The restaurant attracted many Italian food lovers who fancy brick oven pizza, a simple Italian dish with lingering aftertaste. Jane always buys the materials personally, tastes the creations and designs the dishes. She said, thanks to her brain for the biological experiment, she could control the ingredients to guarantee good taste.
The change from biological experiment to pizza, it is a beautiful turnabout for Jane. She did what she wanted to do at 40 and she enjoys the joy of it.
 “This is a sort of experience. If I am asked to rate my satisfaction level with my life, I think it is 9”
 
Enjoy the beautiful ensemble
Jane learned Japanese cuisine when studied in Japan. She also participated in the short-term cooking class in New York. But she loves Italian food the most. She said Italian food was simple but exquisite, like the beautiful ensemble with lingering aftertaste. Though it uses simple materials and cooking method, it brings perfection to taste.
The brick oven pizza in Giano's uses imported degreased cheese, fresh ketchup, high quality Salami (a kind of Italian sausage). Every piece of pizza features the romantic Italian flavor.

The Margherita pizza is very welcome. It has an ingredient called “Basil” which is hard to find in Wuhan. Jane plants the herb personally in front of her house. So her Margherita pizza remains the classic taste.
Promoting the brick oven pizza is to promote the pizza culture
Using brick oven to make pizza is really something fresh. We were surprised by the sight of “brick oven”: a huge oven with flickering fire. The computer controlled the temperature. The plus-100,000 oven was imported from the United States. This kind of pizza which can be found everywhere in Manhattan is both crisp, soft and tasty, which is hard to achieve by ordinary oven. Only this pizza can represent the soul of the pizza culture.
What Jane wishes to do is to introduce the world popular pizza to Wuhan with the best taste.
At Giano's, a 12-intch pizza is only 56 yuan. Four persons can eat their fill by spending only a hundred yuan. Jane said she wanted to eliminate the mystification of western food so that ordinary people can afford it. Jane’s brick oven pizza conquers both the locals and the foreigners.
An Italian customer praised, as he tasted the pizza, that Giano's was the “heaven for pizza”.
 
I wish to promote the culture
Jane felt homesick in the foreign countries. Her local friends helped her out of the loneliness. Many years later, Jane hopes her Giano's is a home to foreigners from all the corners of the word. They can meet here to make friends, talk about the old days and take part in various cultural activities designed by Jane.
This is the third dumpling wrapping. Jane plans to teach foreigners to make Chicken in sugar and vinegar sauce and sweet dumplings. She also wants to open an English class regularly for locals who like western food culture and teach them how to cook simple western dishes. She wants Giano's to be a platform for the exchange of Chinese and western cultures.
Jane is very confident, “Years later, even if Giano's does not exist, I will feel very proud. Of course, I hope Giano's has branches everywhere in Wuhan even all over the country. I hope I can make the genuine pizza culture spread everywhere
