我们平时太习惯于到超市买各种制成品了,很多传统的手艺甚至很简单的做法,我们都快丢光了。

上周,Kay给我们上了一堂制作草莓酱和腌菜的课,之前我们还学过制作酸奶,现在我们三个实习生喝的酸奶都是我们自己做的。

说起草莓,我们农场有一小片草莓地,草莓已经成熟了三周了,每天中午吃完饭,我们都先要摘草莓。摘草莓也是一种乐趣,开始的时候,基本上都是边摘边吃,但是随着成熟的草莓越来越多,再摘的时候都不想吃了。制作酸奶和草莓酱(Translated)

制作草莓酱的过程如下:

1、将草莓洗净后压烂成糊状;

2、按1份草莓7份糖的比例在锅中混合;(糖可依个人喜好增减)

3、将锅加热至沸腾后加入一种粘稠剂(为了使草莓酱更粘稠,但也可不加)将锅端下;

4、将已经准备好的瓶子洗净,将加热好的草莓糊倒入,盖上瓶盖;

5、将盖好盖的草莓酱放到一个如下图的锅里(锅底倒入适量水)加热至水沸腾10分钟后将草莓酱取出;

5、将草莓酱放置阴凉处冷却即可。

制作酸奶的过程如下:

1、将鲜奶倒入锅中中火加热到摄氏80度,加热同时不断搅拌;

2、将鲜奶分别倒入玻璃瓶中,将玻璃瓶放到一个盛有凉水的盆中,待玻璃瓶中鲜奶冷却到40摄氏度,同时不断搅拌;

3、将玻璃瓶取出,分别向鲜奶中加入几勺以前买的或者做的酸奶;

4、盖好盖后,将玻璃瓶放入一个小纸箱中,玻璃瓶周围用毛巾包好,同时在几个瓶子中间放一玻璃瓶热水;

5、将盒子盖盖好,放置阴凉出4小时45分钟后,取出酸奶放到冰箱冷藏即可。

 

很简单吧,试试做做看!

你会发现自己的手艺其实也不错,而且吃起来更香了……

 

Making yogurt and strawberry jam

 

We’re usually too used to going to the grocery store to buy all kinds of products.  We’re quickly losing a lot of traditional crafts and even some very simple methods of doing things.

Last week, Kay gave us a class on making strawberry jam and pickles – we’ve learned how to make yogurt before, and now the three of us interns make all of the yogurt we drink ourselves. 

Speaking of strawberries, our farm has a small strawberry patch.  The strawberries have been ripe for three weeks already, and every day after lunch we all go to pick strawberries.  Picking strawberries is also a kind of enjoyment; at first, it’s basically just picking for a bit and eating for a bit, but as there are more and more ripe strawberries, the next time you pick you don’t really feel like eating them anymore. 

The process for making strawberry jam is as follows:

1.       After washing the strawberries, squash them up.

2.       Use the proportion of one part strawberries to seven parts sugar and blend together in a pan.  (You can add or decrease sugar based on what you like.)

3.       Heat the pan until it boils, and then add a kind of thickening agent (so that the jam will be thicker, but you don’t have to add it) and take the pan off the heat.

4.       Have clean jars ready, pour in the heated strawberry mixture, and put on the jar lids.

5.       Put the covered jam into a pan like the one in the picture below (with an appropriate amount of water in the bottom of the pot) and heat until the water boils; after ten minutes, take the jam out.

Put the jam in a cool, dark place – refrigerating it is OK too.

The process for making yogurt is as follows:

1.       Pour fresh milk into a pan and heat it to 80°C; while heating, stir constantly.

2.       Pour the milk into separate glass jars, put the jars in a pan of cold water, and wait for the milk in the glass jars to cool to 40°C; at the same time, stir constantly.

3.       Take out the jars, and put a few spoonfuls of yogurt that you’ve already bought or made into each jar of milk.

4.       After putting on the lids, put the jars in a small carton and use a towel to pack around the jars; at the same time, put a glass jar of hot water in the middle of the jars.

Cover the box, and after putting it in a cool, dark place for 4 hours and 45 minutes, you can put the yogurt in the refrigerator or freezer. 

It’s really easy – give it a try!  

You’ll find that your own handiwork isn’t that bad at all, and it’s a lot tastier…
