脆嫩爽口好吃停不下的肉菜——【排骨焖鱼筋】

鲟龙鱼筋是取自养殖多年的大规格鲟鱼的骨髓,也叫“龙筋”,含有丰富的蛋白质,据说:“食用龙筋,有补血、益气,强肾开胃、清热解毒、滋阴养颜、明目清心、润燥理肺的功效,对防止骨质疏松,增强肌体免疫力非常有效。”早年更是专供皇室的贡品。


非常幸运,我的那份来自千岛湖的鲟龙鱼套装里,就有一份鲟龙鱼筋,这么珍贵的食材,之前我一次也没吃过更别提烹饪它了。经过网上查看和询问朋友后,我决定拿排骨来焖,并放虾干、干贝、花菇来提味。出锅后,鱼筋透亮,口感弹牙爽口、脆嫩香郁,吃起来很享受。

【排骨焖鱼筋】


主料:

排骨                  500g

鲟龙鱼筋          500g


辅料:

姜                      2片

虾干                  20g

干贝                  20g

干花菇              30g

红葱头              4瓣


调料:

蚝油                  1汤匙

生抽                  1茶匙

老抽                 半茶匙

黄酒                  2汤匙

食用油              适量


做法:

1.排骨洗净剁小块,鱼筋洗净切段;

2.虾干、干贝冲洗干净提前浸软,花菇冲洗干净去蒂浸软,姜去皮切片,红葱头去外皮切碎;

3.冷水锅下排骨,不盖锅盖,中大火煮滚后,转小火继续煮5分钟左右至排骨吐尽血水;

4.捞出吐尽血水的排骨,冲洗干净沥干水分待用;

5.锅中烧水,水开后先放入姜片和1汤匙黄酒,再放鱼筋下锅焯水;

6.焯5分钟左右,捞出沥干水分;

7.另取一锅烧热,下适量油,下红葱头、虾干、干贝煸香;

8.将排骨、鱼筋、花菇放入锅中,适当翻炒至食材水分煸干;

9.往锅中淋入1汤匙黄酒,并翻炒至黄酒酒气完全蒸发;

10.往锅中调入适量生抽、老抽、蚝油;

11.将食材与调料翻炒均匀,加入适量开水,盖上锅盖大火煮滚后,转小火焖1小时左右,至于食材熟透入味;

12.焖好后,关火开盖即可。

Tips:

1.各种调料的量可按口味调整;

2.焖煮的时间和所加开水的量,根据不同的锅具、火力等酌情调整,我加到和食材基本持平;

 

3. 浸泡虾干、干贝、花菇的水不要倒掉,留着焖煮加开水的时候一起放。
