带鱼,也许因为吃的多是冷冻品,重口味的做法居多,所以我一度以为带鱼就适合重口味的做法。直到我吃过了各种蒸制的新鲜带鱼后,带鱼的那份清鲜,细嫩而清爽的肉质,总总让我欲罢不能。但新鲜的带鱼总是可遇不可求的,冰鲜倒是很常见,当冷藏后的带鱼来蒸,口味会大打折扣,这时候还想吃蒸的带鱼的话,我会先将带鱼腌制过油后,再按喜好来蒸,虽然少了那份清鲜,但味道还是不错的。


这道【剁椒蒸带鱼】,我就先将带鱼适当腌制后,下油锅炸,不需要炸得很久,炸到鱼皮成型就好,然后再铺上以剁椒为主的酱料,上锅蒸透就好。这样蒸出来的带鱼,肉质还是很嫩的,因为微炸锁住了带鱼的水份。蒸的时候,带鱼吸足了酱料的味道,带鱼的味和剁椒的酸辣融为一体。蒸好后,趁热撒上葱花,趁着热气带鱼会吸收到淡淡的葱香味,带鱼的香味会更突出。这样做出来的带鱼,鲜中带香,有点微酸,还带着一股温文尔雅的辣味,下酒送饭都合适,成菜看着也红红火火的。

主料:

带鱼        300g


辅料:

姜          3

蒜          1

葱          1


调料:

盐          少许

料酒        1茶匙

剁椒        1汤匙

生粉        适量

食用油      适量

蒸鱼豉油    1茶匙

白胡椒粉    少许


做法:

1.带鱼洗净剁小块擦干水份,用盐、白胡椒粉、料酒拌匀腌制30分钟;

2.姜、葱、蒜处理干净均切碎,葱白和葱绿部分分开放;

3.取一深锅,下适量油烧热;

4.烧热锅的过程中,分批给带鱼两面沾上一层薄薄的生粉;

5.油锅烧热后,将带鱼分批下锅炸;

6.炸至带鱼鱼皮变黄成型,捞出沥油待用;

7.取一空碗,调入剁椒、姜、蒜、葱白、蒸鱼豉油拌匀;

8.将炸好的带鱼码放在蒸盘中,并将拌匀的酱料均匀地铺放在带鱼身上;

9.锅中烧水,水开后,将鱼盘放入锅中;

10. 盖上锅盖,中大火隔水蒸5分钟;

11. 蒸好后,抬出撒上葱绿即可。

TIPS

1.腌带鱼的盐不用太多,一点就好,便于入味。如果剁椒过咸,可以不用放盐腌制,我的剁椒偏酸;

2.带鱼我炸到鱼皮成型,鱼肉还比较嫩;喜欢酥脆口感的可延长油炸的时间,炸到金黄;

 

3.剁椒和蒸鱼豉油的量和按自己的口味适当增减,没有蒸鱼豉油可换成生抽加少许糖。
