The Renowned Pancake in My Hometown

—Huangqiao Sesame Cake

Huangqiao Sesame Cake was originated in Huangqiao, a town in northern Jiangsu. It is a heritage handed down from the honorable ancestors and the descendants are still working hard to develop it.

The Huangqiao Campaign contributes a lot to the “cookie’s” name-getting. In 1940, New Fourth Army marched eastward, opening up anti-Japanese democratic base areas. They had a fierce battle in Huangqiao, which is now called Huangqiao Campaign. Our soldiers kept fighting all day long; sometimes they could not eat anything for several days. The local people were so worried that they came up with the idea of the cake.  They worked day and night under technical guidance. At first, the manufacturing was undertaken on a small scale. Bit by bit, it was widely spread and all the local people began to make the cake. They delivered baskets of sesame cakes to the front-line areas under heavy gunfire, solving warriors’ food problem. After eating the cake, our army built up their strength and in the end, they won the victory. The name of Huangqiao Sesame Cake was handed down from then on.

The making procedures of Huangqiao Sesame Cake are comparatively unique.    Major ingredients are flour, refined salt and so on. People pay particular attention to dough making process, which should be carried out according to temperature. 

Ingredients: white sugar, cooking wine, lard, flour, sourdough, soda, cold water, boiling water, diced ham, sesame, balsam, cooking wine.

Steps:

(1)    Fire up the griddle and put diced ham, white sugar and cooking wine into it. When the sugar melts and permeates the ham, they should be dished up. The lard is supposed to be chopped up in reserve.

(2)    Pour the flour (1.5 kg) into the basin, together with cold water (1.5 kg) and boiling water (4 kg). Mix them up into snow-shaped slices and put it on the chopping board till it is not that hot. Put sourdough into it and knead it till sourdough soaks through to the dough. Place it in a hermetical bowl and wait for its fermentation. The period usually lasts for around four hours (when in summer, the time is shorter and in winter, longer). When many small holes appear in the fracture, the sourdough is formed.

(3)   Put flour (0.05 kg) and lard stearin together and agitate them to pastry. Pour flour (0.3 kg) into the basin, mixed with cold water (0.05 kg) and boiling water (0.15 kg). Figure them into dough. Put sourdough into the basin and pour water containing soda. Knead the mixture till they are homogenized. Clutch it into lumps.

(4)   Press the lump into thin-pancake which is about one and a half inches. Put pastry in the middle of it and wrap it up. Use rolling pin to cut it into strips (one by six inches) and wind it up (screw-shaped). Place the base of the “screw” on the chopping board and flatten it by hand (the diameter is around one and a half inches). Put it on the left hand (the side which has screw thread downward), add lard and diced ham and wrap it into a ball, and then flatten it to a round cake (the diameter is around two inches).

(5)   Brush the sugar on the surface where screw thread lies and paste sesame on this side.

(6)   Bake the cake. When the surface without sesame turns gold, it can be taken out. Spread some balsam on the sesame.

In general, the Huangqiao Sesame Cake is round or oval, shiny with oil, crispy on the outside. There are both sweet and salty ones, which can cater to popular taste. Clever local citizens have developed several different kinds of cakes as time passing by. As long as we are willing to have a try, we will always find one type which we can enjoy to our heart’s content.

Considerable dietary, historical and economic values have been attached to Huangqiao Sesame Cake. For one thing, owing to its delicacy and small-size, it brings people convenience. Besides, it is a good choice for people to give out presents during the holidays. For another thing, as it has a history background and close relationship between the army and the people lies in the making process, many young people have come here out of admiration to study the productive techniques. What’s more, the cake industry has been the mainstay of tertiary industry in Huangqiao. There are many Sesame Cake stores through the nationwide, which not only meets people’s living needs, but also forms a perfect platform for laid-off workers.

All in all, China is known for her massive land and abundant natural resources. Many areas have their own famous dish. In terms of food, examples abound. However, there is only a small section that can earn a place in China and even in the world. The Huangqiao Sesame Cake is one of them. With the economic development and China’s reform and opening to the outside world, the food industry should stick to its own character and make full use of Chinese cultural heritage. Furthermore, they should keep pace with the times. In fact, Macdonald, KFC, hamburger and pizza are all improving themselves on the basis of upholding their own features. To become popular worldwide and flourish as long as possible, we should set up long-term goals and bring out our advantages.

People regard food as their prime want. Having knowledge of other countries’ famous dishes is necessary and one of the premises to learn about the country. The Huangqiao Sesame Cake introduced here is an attempt to spread the local culture and let more people know the food.  I hope it can keep developing and become a bridge that connects people all around the world.  As long as more of us are involved in the global village, we will handle issues better in intercultural communication.
