龙口滴孩纸们,走过路过千万别错过,今天这个饺子~~可是比鲅鱼饺子、扇贝饺子啥的都厉害的——八大蛸(土话“ba dei sao”),说实话,博主和俺家太后对这个东西不感冒,从来也不会主动去买,但是没想到包成饺子后非常之美味(比以前俺们在饭店吃的这种饺子都好吃~~,颠覆了我们对它的看法啊~~)

原料:面粉、温水、八爪鱼、猪肉馅、韭菜、葱姜、生抽、花生油、香油、盐等

 

做法

1、面粉里分多次加入温水,面粉和水的比例在2:1左右(一斤面放225克到250克水),和成软一点的面团,面盆加盖醒面(醒面半小时以上即可)

2、八爪鱼放水中清洗,剪开头部,去除内脏和脏东西,清洗干净后,切碎,并用刀剁馅

3、剁好的八爪鱼馅里加入猪肉馅,八爪鱼和猪肉馅的比例大约是2:1,加入6勺花生油(家里的油勺相当于1.5汤匙)和1勺香油,加入1大勺生抽和2小勺盐,搅拌均匀

4、韭菜清洗干净后切碎,葱姜切末,然后一起加入肉馅中,包的时候拌匀即可

5、和好的面团,搓条下剂子擀成皮,包上馅,锅中水开后,下锅煮,三个开就好

 

小贴士:

1、八爪鱼表面有粘液,一定要清洗干净,并把头部的内脏掏出

2、八爪鱼和肉馅的比例要掌握2:1,猪肉馅用肥瘦适宜的后肘肉即可,肥瘦比例在3:7或是4:6

3、拌饺子馅时要多放油,油少了饺子馅不香

4、韭菜的量随个人喜好,爱吃的多放些,不爱吃的少放些
