豉香梭蟹炒年糕 <wbr> <wbr> <wbr> <wbr>享受螃蟹季的销魂味


 

有童鞋说很纳闷,按理说我博客里关于螃蟹的博文应该很多才是,其实找不出几篇,那啥熟悉我的知道,去年这时候我休博了两个月,螃蟹倒是吃了不少,但是与博客无关,今年又是螃蟹季,我准备恶补一下,如果未来的一段日子,你们看到各种螃蟹菜谱请别奇怪,我能告诉你我是打算做个合集么豉香梭蟹炒年糕 <wbr> <wbr> <wbr> <wbr>享受螃蟹季的销魂味

 

原料:新鲜梭子蟹3只、年糕150克、葱姜适量、豆豉1小勺、生抽1小勺、盐1/2小勺、糖1/2小勺、白酒1/2小勺、油1大勺

 

做法:

1、挑选新鲜螃蟹,放入水中清洗,将肚脐解下,然后将蟹盖揭开,撕去螃蟹的腮,然后将清洗干净的螃蟹一剁两半

2、螃蟹加入盐1/2小勺、白酒1/2小勺腌制一下,年糕放入清水中浸泡10分钟

3、锅里放一大勺油,油热后将切好的葱姜下锅爆香,将腌制好的螃蟹入锅翻炒,加入1小勺生抽调味,加入1小勺豆豉翻炒均匀

4、锅中加入一碗水,将年糕放入锅中和螃蟹一起煮,等到年糕煮软,汤汁粘稠时,加入1/2小勺糖,翻炒均匀即可出锅

 

小贴士:

1、蟹子清蒸的话,只需要洗干净就可以,做菜的时候就需要“肢解”了,从肚脐入手最容易、不费劲,螃蟹的腮要去掉,里面可能有泥沙

2、螃蟹想入味,就要事先腌制,半小勺盐、半小勺酒就可以了,硬邦邦的年糕要事先用清水浸泡下

3、炒螃蟹的时候不用再放盐了,因为生抽和豆豉都是有咸味的,吃得太咸了对身体不好

4、等到年糕煮软后,加入半小勺白糖,可以起提鲜的作用,让菜的口感更好

如何挑选螃蟹:蟹子一定要买活的,海边的人有共识,死了的蟹子是不能吃的,吃了对身体不好,可是就算是活蟹子,挑选也是有窍门的,因为有的小贩会将螃蟹养在水箱里,充着氧气,虽然好几天死不了,但是蟹子慢慢消耗自身的养料,很快就瘦了,虽然重量很重,但一煮除了水就很空的一个壳子了。所以买的时候要尽量买那种不泡在水里的蟹子

 

同等状态下的蟹子,挑选的时候要看活力,体重,颜色~~~(这和选美没啥区别)吃蟹子的行家有的仅从蟹子吐的沫子就能辨别出它的新鲜程度,你不得不服,挑蟹子也是一门学问十月吃蟹 <wbr><wbr> <wbr><wbr> <wbr><wbr>附挑选螃蟹的小窍门

 

当然越张牙舞爪的蟹就越新鲜,你把蟹子翻个身,瞬间跃起正位的是健康有活力的好蟹子,还有一个就是甸重量,同体积的蟹子,越肥的越沉(泡过水的不算豉香梭蟹炒年糕 <wbr> <wbr> <wbr> <wbr>享受螃蟹季的销魂味

 

看肚脐:蟹子翻过来,公蟹的脐是三角,母蟹的脐是半圆的,花脐(花沉)是不尖不圆的,有的童鞋问过花脐(花沉)是个神马东西?豉香梭蟹炒年糕 <wbr> <wbr> <wbr> <wbr>享受螃蟹季的销魂味捂嘴笑,据说是不公不母的螃蟹,下面步骤图里那几个就是,它的肚脐形状介于公母之间,是很好吃的一种螃蟹,蟹黄很多、很鲜

使劲按下肚脐,捏不动的说明蟹子里面比较肥,有肉,一下子就捏动的或是捏着比较软的,说明蟹子肉少壳子空,肥美的蟹子的脐甚至微微翘起来,表示它已经成熟了十月吃蟹 <wbr><wbr> <wbr><wbr> <wbr><wbr>附挑选螃蟹的小窍门
