Grilled Bacon-wrapped Stuffed Shrimp

Grilled <wbr>Bacon-wrapped <wbr>Stuffed <wbr>Shrimp

Prep Time:30 min Coo Time:8 min
4 oz. Lucerne Cream Cheese, softened
1 tbsp. chopped fresh chives
2 tsp. seasoned breadcrumbs
1 large garlic clove, minced
1 tsp. chopped chipotles in adobo sauce
10 bacon slices, halved lengthwise
1 lb. jumbo shrimp, shelled and deveined(about 20)

1. In a small bowl combine cream cheese, chives, breadcrumbs and garlic. Stir in chipotles in adobo; cover and refrigerate.
2. Preheat grill to medium (300°F to 350°F). Place a layer of bacon on a plate lined with paper towels (if multiple layers of bacon, place paper towels between layers). Microwave on HIGH 3 minutes or just until lightly browned but still pliable. (Bacon will be undercooked.) Set aside.
3. Cut through the back of each shrimp to butterfly (do not cut all the way through.) Flatten shrimp slightly. Spoon 1 teaspoon cream cheese mixture evenly onto each shrimp. Wrap 1 piece of bacon around each shrimp.
4. Place shrimp on grill, cream cheese side up. Grill, covered, 4 to 7 minutes or until shrimp are opaque. Remove from grill, and serve.
