Black Sesame Mousse Cake 黑芝麻慕丝蛋糕

Black <wbr>Sesame <wbr>Mousse <wbr>Cake <wbr>黑芝麻慕丝蛋糕 
Ingredients / 材料:
  • 2 Cake layers, 7-8 inch
  • 60 g Black sesame powder
  • 200 g Philadelphia cream cheese
  • 20 g Sugar
  • 150 ml Milk
  • 300 g Heavy cream
  • 5 sheet Gelatin
  • 4 tbsp Water
  • 2片 7-8寸清蛋糕
  • 60克 即溶袋装黑芝麻糊
  • 200克 费城奶油乳酪
  • 20克 砂糖
  • 150毫升 牛奶
  • 300克 鲜奶油
  • 5片 片状吉利丁
  • 4大勺 凉水
Method / 做法:
  1. Place the gelatin sheets in a bowl of cold water to soften them, about 10 minutes. Blend together cream cheese, milk and sugar in a container over a hot bath. Set the softened gelatin mixture too over a hot bath and stir until melted.
  2. Combine the gelatin mixture first with 3 tablespoons of cheese mixture. Then pour the whole mass to the rest of cheese mixture. Add in black sesame powder. Blend well. Chill for 1 hour until the whole mixture has thickened. Whip the heavy cream until soft peaks form. Take the cheese mixture out from the fridge and fold into the whipped cream.
  3. Place one of the cake bottoms onto a cake board or a platter, surround it with a mousse ring. Spread half of the filling onto the cake bottom. Cover the second cake layer on top and finally evenly spread the rest of the filling over. Chill the cake overnight until completely set. Garnish the cake with whipped cream, blueberries coconute shreds and chocolate shaves.
 
  1. 吉利丁片和水放到小碗里,静置待其软化,大约10分钟。费城奶油乳酪,牛奶和砂糖放入容器里,隔热水打匀。将软化的吉利丁隔热水拌化。
  2. 先取3大勺打匀的乳酪糊加入化开的吉利丁液,再和其余乳酪糊混合。加入芝麻粉搅拌均匀。放入冰箱冷藏1小时直到浓稠。打发鲜奶油,用捞拌的方式和芝麻乳酪糊拌匀即可。
  3. 慕斯圈放到蛋糕纸板或餐碟上,放入一片清蛋糕,倒入一半慕丝馅,稍微抹平。接着盖上另一片蛋糕,然后倒入其余的慕丝馅,抹匀表面。隔夜冷藏至完全凝固。用少许的打发的鲜奶油,蓝莓,椰丝和巧克力碎装饰。
