Dialogue At the Restaurant

(J: Jim G: George W: Waitress C: Cashier)
(J: 吉姆 G: 乔治 W: 女服务生 C: 出纳员)
W: Good afternoon, sir. Just the two of you?
下午好,先生。就两位吗?
J: Yes.

W: Will you come this way, please? (The Waitress leads them toward the rear of the restaurant to a table by the wall. She gives them each the menu) I’ll be right back.
这边请,好吗?(女服务生领他们餐馆后面靠墙的一张桌子。他给每人一份菜单。)我马上回来。
G and J: Thank you.
谢谢你。
G: A very attractive restaurant, isn’t it?

J: I think so. Real homelike. It was redecorated this spring. Do you see anything on the menu that looks good. I don’t know where to begin.

Although these dishes are collectively referred to as Beijing dishes (Jing Cai), they are said to consist mainly of Shandong dishes (from Shandong province). Most have a high calorie value answering the demands of the cold northern climate. Well-known Beijing dishes include whole roast duck or “Peking Duck”, shuan yang rou(slices of lamb which is dipped in boiling water and then coated with a do-it-yourself sauce), roast lamb and crab.
尽管这些菜统称为北京菜(京菜),它们据说主要由山东菜组成(来自山东省)。大多数卡路里值较高以满足北方寒冷的气候。著名的北京菜包括整只烤鸭或“北京烤鸭”,涮羊肉(羊肉片浸到开水中,然后用自制调料沾着吃。)烤羊肉和螃蟹。
Gourmets in Beijing are unanimous in admitting that Peking Duck is one of the best dishes in the capital city. The raising of ducks is called “tianya” (“tian” means “stuffing”). Specially prepared feed is provided at regular intervals for the ducks to gain more flesh and fat. They are roasted whole over a fire burning Chinese palm wood. The ducks are roasted in such a way that the skin becomes crispy brown and the fresh juicy and tender.
北京的美食家都一致认为北京烤鸭是首都最好的一道菜之一。饲养的鸭子叫“填鸭”(“填”就是“填充”的意思。)。要为鸭子准备专门的饲料以规定的间隔时间来喂使得鸭子更嫩更肥。它们在枣、李、杏等果木的火上烤。这样烤的鸭子,皮呈脆棕色,肉多汁而鲜嫩。

Since it is a Mongolian dish, only young lambs from Inner Mongolia are chosen. Mutton is sliced wafer thin and is cooked in a pot of boiling water, the mutton is then dipped into a sauce made by using such ingredients as soy sauce, pepper, ginger, red pepper oil, sesame seed oil, sesame seed paste, preserved bean curd and spring onion to make it taste tender and juicy and specially delicious.
由于是蒙古菜,只选内蒙古的嫩羊肉。羊肉被片得极薄,在开水锅里煮,然后,沾上用诸如酱油、胡椒粉、姜、辣椒油、芝麻油、芝麻酱、腐乳汁和葱茸等成分做成的调料,使得它吃起来鲜嫩而多汁,特别美味。

This dish is prepared by mixing minced mutton with raw eggs, and then cooking the mixture on a hot iron plate with preserved clam sauce. Traditionally speaking, one is supposed to stand when eating this dish.

Cooking in China has an age-long history. It specializes in its own ways of processing various kinds of dishes of local tastes and characteristics.

According to books on cooking, the total number of ancient and modern Chinese dishes is about 8000, taking only the famous dishes! The ingredients may be classified into some 600 broad categories. There are 48 basic ways of cooking, including roasting, frying and boiling, all of which bringing out the best ingredients.
根据烹饪书籍记载,古今中国菜大约有8000种,只指有名的菜肴!调料可分为600多种。有48种基本烹饪方式,包括烤、炸和煮,所有这些都需要有最好的配料。
Chinese cooking is subdivided into a great man schools notable for their local flavors. Among them are the more popular and well known eight schools-Shandong, Sichuan, Jiangsu, Zhejiang, Guangdong, Hunan, Fujian and Anhui. There are also more than twenty other outstanding local dishes like Beijing dishes and Shanghai dishes. Vegetarians and Buddhists have their own particular tastes. In big cities like Beijing, Shanghai and Guangzhou, restaurants of a certain local flavor of its own style or after a certain school can easily be found.
中国烹饪被分为许多大的菜系,以地方风味著名。它们当中较受欢迎和著名的有八大菜系--山东、四川、江苏、浙江,广东,湖南,福建和安徽。还有二十几种其他著名地方菜如北京菜和上海菜。素食者和佛教徒有他们自己特别的菜。在北京、上海和广东这样的大城市里,有自己风格的地方风味或某些菜系之外的餐馆能很容易地找到。
Art of cooking in China gives much attention to the colors, the flavors, the tastes and the appearances of cooked dishes. Even the arranging of the cooked pieces in the dish is done in such utmost care as to make the whole dish present an artistic look. In a word, Chinese cooking has won worldwide reputation.
中国烹饪艺术特别注重烹饪菜肴的色、香、味、型。即使是在摆盘时也特别小心,以便让整个盘子呈现美感。一句话,中国烹饪世界闻名。
