X’mas Eve Eatin’(2007-12-25 11:47:38)
 

Dear all,

 

This Christmas Eve was a very special one… cause this was the first time I had ever attempted to prepare a full meal for more than four people! Mom, my two friends from highschool and I devoured a delectable meal all prepared by yours truly tonite.

 

For starters I made a homemade Artichoke and Spinach dip and served it warm with organic tortilla chips (so fattening… but if xmas isn’t the time to indulge, when is? My favourite of the night). The main course was the most tricky for me because I had never done it before: I prepared Lemon Rosemary Chicken (slow roasted to PERFECTION!) with a side of roasted yams and carrots. The chicken surprisingly more moist than I thought it would be (organic chickens tend to be tougher, dryer)… the only thing I would change about it the next time I make this dish again, is I’d add more salt next time! And finally, I made what Allrecipes.com calls an “Irish Champ” (this was mom’s favourite). The Irish Champ was basically traditional mashed potatoes with minced green onion thrown in. I decided to leave out the dessert part cuz the dip itself is quite rich. We opened a bottle of organic red wine (gift from my cousin) and toasted each other to a merry and healthy Christmas and New Year!
