Cheese is one of the earliest man-made foods, with a history dating back more than 5,000 years. It’s enjoyed almost everywhere from remote villages high in the mountains to the tables of the finest restaurants.

If you want to enjoy the world’s best 1)cheddar, then look no further than the beautiful county of Somerset in southwest England where this famous cheese first originated. Not far from Wincanton are two farms that produce cheddar in the traditional way. These are run by dairy farmers Jamie Montgomery and Stephen Keene. The Keene family have been making cheese at Morhays Farm for over a hundred years. So what makes Keene’s cheddar so special? All the cheese on this farm is made by hand, the traditional way, using only raw milk.

Stephen: Our argument is that we’ve done exactly what we’ve always done. I mean, no one heard of 2)pasteurisation before. If you pasteurise, you’re killing off some of what’s in the milk and that’s partly what gives some of the flavours to our products. So why kill off what you need?

Despite pressure to pasteurise his milk, Stephen now sells half his production to supermarkets in the UK, a sure sign that demand for quality and flavour is returning to the market.

Another name long 3)associated with traditional cheddar is Montgomery. And it seems only fitting, considering its reputation, that it’s made on a farm beneath the foot of a large flat-topped hill. Jamie insists on using raw milk and natural animal 4)rennet.

Stephen: One tale was that someone hung some chee...some milk up in a leather bag, it was probably a 5)bladder or whatever, and next day they realized that it 6)curdled and they thought, “well this looks interesting.” They kept it a bit longer and it got harder, and I mean whether that’s just true or whether it’s 7)old wives?tale or not I don’t know, and the story is that it started, happened actually in Cheddar, which is in Somerset. That’s...where the name come from.

When cheese is made by hand the old fashioned way, it varies every day and a regular check is essential to ensure good quality cheeses with plenty of flavour. To help with the grading, Jamie is joined once a month by Randolph Hodgson of Neal’s Yard Dairy fame, a champion of British cheese.

Randolph: It’s all there, it’s in colour, you’ve got all the components and the sort of mis...8)misapprehension about cheese that the older the better...and it’s not like that. It’s more like a, you know, if you judge a 9)vintage wine, there’s an ideal drinking time and then after that it loses. It’s exactly the same thing, except here the vintage is every day so every day’s cheese is different. I mean you can explain that to people ‘til you’re blue in the face. Until they taste it you don’t ever get that across.

These two hold tasting sessions that can last for three to four hours, as all the cheese 10)batches from the previous months are tested. Every batch of cheese is different and each is checked for 11)texture, smell, and most importantly, flavour.

Cheddar may be one of the world’s most popular cheeses, but sadly, all too often, it’s a predictable, boring, mass-produced cheese made in large blocks and matured  under 12)vacuum before being sold in supermarkets. The very best cheddar is still made on the farm, preferably from raw milk, and it’s a true reflection of the cheesemaker’s art. Every batch is different, which is why they’re so interesting to work with. Hand-made farm cheddar is now very rare in England and there are just a few producers left making this type of cheese the traditional way.

史蒂芬虽然面对着给牛奶消毒的压力，其产品的一半仍然售给英国的超市，证明市场对奶酪质量和口味的需求复苏。

蒙哥马利是另一家传统切德奶酪制造商，它的奶酪是在一座平顶大山山脚的一个牧场里生产，对于盛名之下的它，真是再合适不过了。杰米坚持以生牛乳和天然干胃膜进行奶酪制作。

切德奶酪可能是世上最受欢迎的奶酪品种，可惜多数是大规模的制作: 大块大块地制作，在真空里发酵，味道千篇一律，索然无味，然后送到超级市场出售。而优质奶酪则仍然产自牧场，以生牛乳制作，这种方式生产的奶酪能反映奶酪生产者的技艺。每批各有不同，因此饶有趣味。手工制作的奶酪在英国已经日渐式微，传统的奶酪厂家只剩下硕果仅存的几家了。

That song, "Hound Dog," was one of Elvis Presley's most popular records. It sold five-million copies in 1956. Music industry experts say more than one-thousand-million of Elvis's recordings have sold throughout the world. He was a success in many different kinds of music-popular, country, religious, and rhythm-and-blues.

He also listened to music that influenced his later singing, including country, rhythm-and-blues, and religious music. Elvis and his family moved to Memphis, Tennessee when he was thirteen. After high school, he had several jobs, including driving a truck. In 1953, he made his first recording of this song, "My Happiness."

By the middle of the 1950's, Elvis Presley was known around the world as the young man who moved his hips in a sexual way as he sang rock and roll music. Many adults said he and his music were bad influences on young people. Young women loved him. Huge crowds attended his performances. He made his first movie in 1956. It was "Love Me Tender." The title song was a big hit.

Elvis Presley was one of the highest paid actors in Hollywood for a number of years in the 1950's. He acted in thirty-one movies. In 1958, just as he finished making the movie "King Creole," Elvis received notice that he had to serve in the United States Army. He was stationed in Germany where he lived in a large house and dated a lot of beautiful women. One young girl he met in Germany was Pricilla Beaulieu, the daughter of an army officer. She was fourteen years old. Later, after Elvis had finished his army service, she came to live with him in Memphis. They married in 1967, when she was twenty-one years old. He was thirty-two. They became parents nine months later of a baby girl, Lisa Marie.

Elvis Presley won three of the music industry's highest award, the Grammy. He received the first one in 1967. It was for "How Great Thou Art," an album of religious music.

Every Tuesday evening members of Tsimshian Haayyuk gather at Daybreak Star, a native American community and arts center in Seattle. Three years ago, when they began, they numbered half a dozen. Today, as many as fifty dancers, singers and drummers, spanning three generations, come to participate.

The Tsimshians were originally from an area along the Pacific Coast that is now British Columbia, Canada, but many of them moved to Alaska in the 1890s. Missionaries and the US and Canadian governments tried to destroy Tsimshian culture and language, but some of the people managed to preserve the old ways, including Mr. Boxley's grandparents, who raised him in Metlakatla, Alaska. They taught him everything he knows about his culture. Now he is sharing that knowledge with others.

Smoke 1)billows from a residential block in Tehran, hit by an Iranian military aircraft, carrying at least 94 passengers and crew. Police say all on board and several others on the ground were killed. The Tehran 2)coroner”s office has told Reuter’s that it expects between 110 and 120 dead. Witnesses say, there was a loud 3)bang when the plane 4)struck the apartment building, setting fire to it. It’s home to about 150 people. According to one policeman, some residents jumped out of windows to 5)escape the flames. Another said several children were among the dead. 

The plane was heading to the southern port city of Bandar Abbas when the pilot reported engine trouble and requested an emergency landing. Many of the plane’s passengers were local journalists going to cover military exercises in the Gulf.

No doubt you have noticed a lot of people walking down the street with earphones on these days, listening to music. Sometimes it’s so loud, everyone gets to share it. Well, guess what? Doctors have discovered those people with earphones may be 6)ruining their hearing. 

Mikel McCavino is a typical, video-game-playing, cell-phone-talking, music-7)obsessed-teenager. And he loves his iPod.

Mikel: 8)Pretty much every day, every moment that I can fit it in, I try to listen to music.

But when the 9)volume goes up, so does the risk of hearing loss, dramatically.

Brian Fligor: Noise 10)induced hearing loss develops 11)insidiously. 

12)Audiologist Brian Fligor has found that 13)personal stereo systems, like the iPod, can lead to significant hearing loss.  He says there are two critical factors: how loud the music is, and how long you listen.

When he tested my volume 14)tolerance, I was safe at around 80 15)decibels, or about half way up the dial. But at decibel levels over 85, Fligor suggests no more than an hour a day with headsets outside the ears, and only 15 minutes with those inside. 

Fligor: For some types of inner earphones most certainly there is greater potential for danger.

Kathy Peck (Expert): You know, if somebody can hear your system next to you, if you誶e on the bus or something, it’s too loud.  It’s way too loud.

And it doesn’t matter what type of music you enjoy. Your ears don’t 16)discriminate. You can love Rock’n’Roll for lifetime, if you can just keep it down. 

From Hi- tech to

     High Efficiency  

General Motors plans on 17)laying off thousands of employees and closing a number of plants across the United States. The move comes at a time when GM is both struggling to 18)stay afloat, and to 19)streamline its operations to take advantage of future technologies.

One of those technologies is 20)robotics. There are more than 150,000 robots operating in factories across America, and more than half of them are used at car 21)assembly plants. 

The automobile factory. People in the state of Michigan have been making cars and trucks for more than 100 years now. Today the parts look similar, 22)transmissions, steel frames, windows, but the workforce has changed. Now, a lot of the work that’s needed to make a car, is being done by robots.

GM Manager: The robots replace dirty and dangerous jobs that traditionally are very, very difficult for people to do on a day in and day out basis.

When you come into an auto plant like this safety is of the highest concern. All the employees wear these 23)protective 24)shields. But with robots safety is less of an issue, and a greater emphasis can be placed on efficiency. 

In the body shop alone, there are more than 300 25)welding robots that perform more than 2,000 welds per vehicle. Robots are also used in general assembly where all the parts in a car are placed together. 

GM Manager: So the things that are 26)routine and repetitive, and very difficult for an operator to do from an 27)ergonomics perspective, or being able to lift up heavy weights. We use the robots to do those functions.

The robots are able to work on both cars and trucks, from two-seat sports cars, to four-door 28)SUVs. And, in a competitive field that’s rapidly changing, the robots allow GM to respond quickly to market trends, without having to fully retrain a work force.  As a result, GM needs only about half the number of workers in this factory than it would if robots weren’t used.  As for human auto workers, GM says there will always be a need, but those employees will have to acquire different skills.

royal family “皇室”还是“王室”？

在君主立宪制国家，君主们虽然已经没有实权，但他们依然是国家象征。对应不同的国家时，“royal family”这个词应该有所区别地译成“皇室”或“王室”。

如英国的国家首脑（head of state）是伊丽莎白二世（Queen Elizabeth II），由queen和king作为君主（monarch[5mCnEk]）的国家，它们的royal family就应称作王室。

而日本的君主是皇帝（emperor），所以我们就应该说日本皇室。

欧洲大多数国家的royal family都是王室，如比利时、丹麦、摩纳哥、挪威、荷兰和瑞典等。

Traditional Chinese medicine says that good health is associated with the balance of qi-an energy force that flows through the body. Qi can be hindered or helped by yin and yang-opposing forces that, when balanced, work harmoniously together. According to traditional theory, the goal of acupuncture is to promote the flow of qi by keeping yin and yang in balance-and this is done by inserting needles at various points along primary channels and meridians that crisscross the body.

In the early 1970's, Western scientists discovered natural brain chemicals called endorphins-opiates produced by the nervous system in response to pain. It was about that time that a prominent American journalist, James Reston, wrote about his appendectomy in China, where acupuncture was used to alleviate post-operative pain. Could it be, asked Western scientists, that inserting needles into the body at precise points might stimulate nerves that cause the brain to release its natural pain- killing chemicals?

David Ramsay, president of the University of Maryland at Baltimore. Doctor Ramsay chaired a panel of medical experts convened by the US National Institutes of Health which endorsed acupuncture for treating certain types of nausea, vomiting and pain: "... that is, the nausea that follows being given an anesthetic for surgery, following chemotherapy, the vomiting nausea that accompanies pregnancy, and post-operative dental pain. Treatment under these circumstances really did work."

The principal concern among Western scientists in evaluating acupuncture's effectiveness has been the so-called placebo effect — the possibility that beneficial outcomes derive not from the treatment itself, but from the patient's belief that it works.

Researchers got around that problem by measuring brain chemistry during acupuncture. Drugs were administered to block the brain's natural opiates while the person was undergoing needle stimulation. As a result of the opiate blockage, the acupuncture had no effect in stopping pain-proving that there's a physiological mechanism to acupuncture that goes beyond mere belief.

Acupuncture is widely employed in easing cravings and withdrawal pains of heroin addicts. Janet Konefal of the University of Miami Medical School, explains: "Forty percent of the drug courts in the United States use acupuncture as part of their therapy. In the Miami system alone there are between three and four hundred treatments per day."

One of the key benefits of acupuncture that seems to be emerging from various studies is that it has few, if any, side-effects; and that when used with standard drug treatment — in anesthesia, for example-it allows physicians to cut back on medication, delivering the same level of benefit with fewer negative effects.

In "Second Hand Rose" — a tune from the 1921 Ziegfield Follies revue — the famous comedian Fanny Brice complained about how hard it was to find a suitable suitor.

Reykjavik—the Fairy Capital of the World

I celand, the land of fire and ice, is home to Reykjavik, the world’s northernmost capital. Home to just a little over 100,000 people, it’s hardly a giant among cities. But don’t be fooled by its sleepy 1)appearance, there’s a lot more bubbling just beneath the surface.

John Bell (Travel Editor): Reykjavik’s often compared with 2)Reading, which is rather sad.  Iceland, cold, snow, small, 3)insignificant. Whoa, not on Friday night in Reykjavik!

The Icelandic capital is, without doubt, one of the world’s wildest party towns, and for a night out the good folk of Reykjavik are hard to beat.

Gill Williams (Travel Editor): I thought that the Icelanders would all be fishermen, and wear wooly hats and funny boots, instead they’re party animals.

But the locals aren’t the only things getting hot and 4)steamy. Iceland is 5)arguably the globe’s greatest 6)geological wonder, providing 7)glaciers, volcanoes, and boiling hot 8)geysers, used to fill Reykjavik’s seven 9)thermal baths where Icelanders are known to get a little bit 10)frisky.

Gudrun (Thermal Baths Employee): Sometimes the girls go to the hot 11)tub to 12)gossip about boys, the boys get to look at the girls in their little clothing, for free, you know?

Sounds like someone needs a cold shower.

Simon Calder (Travel Editor): Anybody who lives very close to the 13)Arctic Circle, thousands of miles from known 14)civilization, or at least 15)Glasgow, 16)is bound to be just a little bit different from everywhere else. So part of the fun of going to Reykjavik is meeting the Icelanders and finding that they’re just a little bit strange.

And you don’t get much stranger than this: Reykjavik lays 17)claim to being the fairy capital of the world. A 18)whopping 70% of locals believe in what they call the “Hidden People.” ?

Magnus (19)Elf Expert): This is a typical house of a Hidden People and elf family. There are two families living here. They usually live in stone, usually when they have good views, like we can see here. They have a view over the city. That’s what the Hidden People and the elves very dearly love. And then we have 20)gnomes, and 21)dwarves and trolls, and fairies, and a lot of other beings.

Local: I haven’t seen them, but I believe in them.

The Truth of Vitamins

Britain is in the middle of a health revolution. And every day, millions of people take vitamin 1)supplements, convinced of their power to keep them healthy. But there is a growing 2)anxiety from scientists that our habit of taking large 3)doses of some vitamins could have very different 4)consequences.

Vitamins are nothing more than 5)chemicals that occur naturally in food. Our bodies cannot produce them themselves, and nearly a century ago scientists discovered just how vital they were for our health. Vitamin A, found in 6)dairy products, liver and fish prevents blindness and growth 7)deformities. Vitamin C, from oranges and other 8)citrus fruit, has all but ended 9)scurvy. And Vitamin D, found in fish, means children need no longer grow up with 10)rickets.  

But 40 years ago, someone came along who would transform the world’s 11)perception of vitamins. 12)Pauling became convinced that vitamins could not only prevent 13)deficiency diseases, they could do something far, far bigger. The key, according to Pauling, was to take them in huge doses, because that could prevent you from catching the most 14)irritating of diseases, the 15)common cold. But does Vitamin C really prevent the common cold as Linus Pauling believed? 

Professor Balz Frei is one of the world’s leading experts on Vitamin C. He has studied the evidence from 16)clinical trials involving thousands of volunteers from across the world, designed to 17)investigate Pauling’s claim that large doses of Vitamin C fights the common cold. 

Professor Frei: I’ve looked at the evidence that Vitamin C can prevent the common cold, but for the general population there is really no evidence from scientific studies that Vitamin C can lower the 18)incidence of the common cold, or prevent it 19)in the first place. So taking Vitamin C supplements is not gonna help prevent the common cold.

20)In other words, the director of the very 21)institute set up to pursue Linus Pauling’s work, now believes that the great man was wrong. 

But there is another anti-22)oxidant vitamin which is popular and about which scientists are much more 23)cautious—Vitamin A. 

In vegetables, there is a chemical called  24)beta carotene which your body converts into Vitamin A. Studies have shown that people who eat a diet rich in beta carotene are much less likely to develop lung cancer. And this seemed to offer a 25)genuine breakthrough. 

Demetrius Albanes is one of the leading cancer experts in America. He and his colleagues organised a study to confirm that high dose pills really could save millions of lives.

To have the best chance of seeing whether the pills really could prevent lung cancer, they were given to people most likely to develop it— smokers. It seemed that beta carotene pills, which everyone had hoped would prevent lung cancer, were having the exact opposite effect. 

It was a 26)devastating result. The people taking the pill had shown an 18% increase in lung cancer.

Scientists still do not fully understand why beta carotene appears so beneficial in food, but seemed to have such a devastating effect on smokers when taken in a high dose pill.  But because of these studies, in 2003, safety experts in the U.K. advised smokers not to take beta carotene supplements. And advised everyone to limit their daily 27)intake from high dose pills. These studies were a 28)salutary lesson that vitamin supplements were not just some harmless natural 29)remedy. In high doses they could have unexpected and dangerous consequences.

Until we understand more about these powerful chemicals, most doctors would advise everybody to seek advice before joining the high dose Vitamin Revolution.

The ups and downs of life may seem to have no 1)predictable plan. But scientists now know there are 2)definite patterns that almost all people share. Even if you’ve passed some of your ?)prime,?you still have other prime years left. Certain important primes seem to 4)peak later in life.

When are you smartest? From 18 to 25, according to 5)I.Q. scores; but you are wiser and more experienced with increasing age.

You are sharpest in your 20’s; around 30, memory begins to decline, 6)particularly your ability to perform 7)mathematical 8)computations. But your I.Q. for other tasks climbs. Your vocabulary at age 45, for example, is three times as great as when you graduated from college. At 60, your brain 9)possesses almost four times as much information as it did at age 21. This 10)trade-off between sharpness and wisdom has led psychologists to suggest that ?1)maturity 12)quotients?M.Q.) be 13)adopted for adults.

When are you happiest? You have the best physical sense of yourself from 15 to 24; the best 14)professional sense from 40 to 49.

Before age 24, we believe that our happiest years are yet to come; over 30, we believe that they’re behind us. A National Health Survey agrees: After age 30, we “become more realistic and do not view happiness as a goal in itself. If we maintain our health, achieve professional and 15)emotional goals, then happiness, we feel, will follow.?”

When are you most creative? Generally between 30 and 39, but the peak varies with different professions.

16)Mozart wrote a 17)symphony and four 18)sonatas by age eight, and 19)Mendelssohn 20)composed his best known work, A Midsummer Night’s Dream, at 17. But most of the great music was written by men between 33 and 39. Though the peak in most fields comes early—most Nobel prize winners did their top research in their late 20’s and 30’s—creative people continue to produce quality work throughout their lives. For the ?1)well-conditioned mind,?there is no upper limit.

Emma: Yeah, becoming a teenager. Starting to notice the opposite sex. Having to find a date for the ball. Yeah.

Host A: How is it for you, having done this now for four...Were you 11 when you started?

Emma: I started 1)auditioning when I was nine so...

Host A: Right.

Emma: Forever.

Host A: You’ve been at this forever. Does it feel good to just sort of play your age and have something that’s kind of in the 2)realm of what your real life? Is your real life like that?

Emma: Well, I don’t go to magical school, but apart from that...

Host A: Right.

Emma: No. I think there’s definitely a lot that I can relate to, that Hermione’s kind of going through. Definitely.

Host A: Yeah. There’s a wonderful scene with this 3)Yule ball that comes up.

Emma: Yes.

Host A: Where there’s this breathtaking moment in the movie where we get to see you in this gorgeous gown. Tell me a little bit about what that was like.

Emma: It was amazing, actually. To some extent they’ve always sort of 4)played down how I looked in the films, and suddenly they really wanted this kind of Julia Roberts prettywomanesque moment. And it was really good fun. The dress was beautiful. And for this scene, actually, we had to learn to 5)waltz, which was fantastic fun.

Host A: Yeah?

Emma: All the cast was involved and, yeah, it was great.

Host A: Now, I read that you learned how to waltz, and also, did you have to learn how to cry?

Emma: No. Well, it was the first time I’d ever had to properly cry on screen.

Host A: Right.

Emma: Actually. You know what? It’s funny what I find really difficult; I find it easiest to cry. But to laugh 6)realistically, I mean to say laugh 7)on cue. It’s really hard not to make it sound kind of fake.

Host A: Right. Did you have to think of something terribly sad when you cried on screen? Or were you so 8)organic and in the moment?

Emma: Well, no, I did have to try and think about something that was really upsetting. And yes.

Host A: Is this old for you? Now that you’ve a professional Harry Potter film star, giant mega-star of the universe?

Emma: I didn’t think I knew this could ever really get old. So that was kind of the question that was on the red carpet when I did the Goblet of Fire 9)premiere, you know, is this getting old? I don’t think you can ever possibly get used to millions and millions of people. I don’t know how many people there were outside that cinema, but, you know, it’s still new and exciting every single time. And I think for me, what makes it, you know, what keeps me really interested is the fact that we’ve had a new director every single time around. And I always learn something new. They always bring something to it. They always have their own seperate vision, yeah, which is great. And also J.K. Rowling just writes such interesting and amazing stories.

Host A: Amazing stories.

Emma: In the film, Yes.

Host B: Is it true that as the books come out that it takes the characters up 15)chronologically in age?

Emma: Yes, yeah. That’s right.

艾玛: 哦，不是，我确实得设法想一些让人情绪低落的事情。对，是这样的。

主持人甲: 表演对你来说是不是太沉闷了？现在，你可是职业的“哈利·波特”电影的明星啊，你是个全球巨星了。

艾玛: 我想我并不觉得演戏会变得沉闷。我在参加《哈利·波特与火焰杯》首映式，踏上红地毯的时候，别人也问过我这种问题, 你知道，这样演下去会变得沉闷吗？我并不认为面对数以百万计的观众，一个人可以一下子应付自如。我不知道剧院外有多少观众守在那里，不过，你知道，每一次遇到这种情况我都会感觉新鲜和激动。而且我想，对于我而言，让它，你知道，让我真正感兴趣的是我们每一次都会有一个新导演。而每一次我都会学到新东西。他们总是带来一些好的东西。 他们总是有着自己的一套见解，嗯，真的很不错。而且J·K·罗琳写的故事是那么有趣和精彩。
