Cheese is one of the earliest man-made foods, with a history dating back more than 5,000 years. It’s enjoyed almost everywhere from remote villages high in the mountains to the tables of the finest restaurants.
If you want to enjoy the world’s best 1)cheddar, then look no further than the beautiful county of Somerset in southwest England where this famous cheese first originated. Not far from Wincanton are two farms that produce cheddar in the traditional way. These are run by dairy farmers Jamie Montgomery and Stephen Keene. The Keene family have been making cheese at Morhays Farm for over a hundred years. So what makes Keene’s cheddar so special? All the cheese on this farm is made by hand, the traditional way, using only raw milk.
Stephen: Our argument is that we’ve done exactly what we’ve always done. I mean, no one heard of 2)pasteurisation before. If you pasteurise, you’re killing off some of what’s in the milk and that’s partly what gives some of the flavours to our products. So why kill off what you need?
Despite pressure to pasteurise his milk, Stephen now sells half his production to supermarkets in the UK, a sure sign that demand for quality and flavour is returning to the market.
Another name long 3)associated with traditional cheddar is Montgomery. And it seems only fitting, considering its reputation, that it’s made on a farm beneath the foot of a large flat-topped hill. Jamie insists on using raw milk and natural animal 4)rennet.
Stephen: One tale was that someone hung some chee...some milk up in a leather bag, it was probably a 5)bladder or whatever, and next day they realized that it 6)curdled and they thought, “well this looks interesting.” They kept it a bit longer and it got harder, and I mean whether that’s just true or whether it’s 7)old wives?tale or not I don’t know, and the story is that it started, happened actually in Cheddar, which is in Somerset. That’s...where the name come from.
When cheese is made by hand the old fashioned way, it varies every day and a regular check is essential to ensure good quality cheeses with plenty of flavour. To help with the grading, Jamie is joined once a month by Randolph Hodgson of Neal’s Yard Dairy fame, a champion of British cheese.
Randolph: It’s all there, it’s in colour, you’ve got all the components and the sort of mis...8)misapprehension about cheese that the older the better...and it’s not like that. It’s more like a, you know, if you judge a 9)vintage wine, there’s an ideal drinking time and then after that it loses. It’s exactly the same thing, except here the vintage is every day so every day’s cheese is different. I mean you can explain that to people ‘til you’re blue in the face. Until they taste it you don’t ever get that across.
These two hold tasting sessions that can last for three to four hours, as all the cheese 10)batches from the previous months are tested. Every batch of cheese is different and each is checked for 11)texture, smell, and most importantly, flavour.
Cheddar may be one of the world’s most popular cheeses, but sadly, all too often, it’s a predictable, boring, mass-produced cheese made in large blocks and matured under 12)vacuum before being sold in supermarkets. The very best cheddar is still made on the farm, preferably from raw milk, and it’s a true reflection of the cheesemaker’s art. Every batch is different, which is why they’re so interesting to work with. Hand-made farm cheddar is now very rare in England and there are just a few producers left making this type of cheese the traditional way.

That song, "Hound Dog," was one of
Elvis Presley's most popular records. It sold five-million copies
in 1956. Music industry experts say more than one-thousand-million
of Elvis's recordings have sold throughout the world. He was a
success in many different kinds of music-popular, country,
religious, and rhythm-and-blues.

Elvis Aaron Presley was born in the southern town of Tupelo,
Mississippi on January 8th, 1935. His family was extremely poor.
During his childhood, he sang in church with his parents. He also
listened to music that influenced his later singing, including

family moved to Memphis, Tennessee when he was thirteen. After high
school, he had several jobs, including driving a truck. In 1953, he
made his first recording of this song, "My Happiness."

By the middle of the 1950's, Elvis Presley was known around the
world as the young man who moved his hips in a sexual way as he
sang rock and roll music. Many adults said he and his music were
bad influences on young people. Young women loved him. Huge crowds
attended his performances. He made his first movie in 1956. It was
"Love Me Tender." The title song was a big hit.

number of years in the 1950's. He acted in thirty-one movies. In
1958, just as he finished making the movie "King Creole," Elvis
received notice that he had to serve in the United States Army. He
was stationed in Germany where he lived in a large house and dated
a lot of beautiful women. One young girl he met in Germany was
Pricilla Beaulieu, the daughter of an army officer. She was
fourteen years old. Later, after Elvis had finished his army
service, she came to live with him in Memphis. They married in
1967, when she was twenty-one years old. He was thirty-two. They
became parents nine months later of a baby girl, Lisa Marie.

Haayyuk gather at Daybreak Star, a native American community and
arts center in Seattle. Three years ago, when they began, they
numbered half a dozen. Today, as many as fifty dancers, singers and
drummers, spanning three generations, come to participate.

The Tsimshians were originally from an area along the Pacific Coast
that is now British Columbia, Canada, but many of them moved to
Alaska in the 1890s. Missionaries and the US and Canadian
governments tried to destroy Tsimshian culture and language, but
some of the people managed to preserve the old ways, including Mr.
Boxley's grandparents, who raised him in Metlakatla, Alaska. They
taught him everything he knows about his culture. Now he is sharing
that knowledge with others.

The children are learning on their own by dancing and singing along
with their parents and elders. Tsimshian Haayyuk, which means
"spirit of the Tsimshian," is very much a family endeavor. Founder
and artistic director David Boxley says nearly all of the drummers
and dancers belong to four families. And for those who are on their
own, the group has become a family.
